<p>Palmkohl ist im Herbst mein absolutes Lieblingsgemüse. Leider ist er in Deutschland noch schwer zu bekommen. In Supermärkten werdet ihr wahrscheinlich kein Glück haben, doch auf Wochenmärkten schon eher. Viele meiner Hobby-Gärtner*innen haben ihn selbst im Garten angebaut, das will ich nächstes Jahr auch unbedingt versuchen. </p>



<p>Solltet ihr keinen Palmkohl finden, könnt ihr dieses Rezept selbstverständlich trotzdem machen. Spinat, Mangold, Pak Choi oder Grünkohl sind prima Alternativen und ebenfalls alle reich an Nährstoffen. </p>



<p>Zusätzlich zum Palmkohl brauchen wir für diese Suppe noch Pilze, Paprika (oder natürlich jedes andere Gemüse eurer Wahl), Glasnudeln, Limetten und etwas Tamari (Sojasauce). Für dieses Rezept habe ich mich für rote Currypaste entschieden. <p><strong>Himmlisch für Körper und Seele, weil &#8230;</strong></p>



<p>&#8230; diese Suppe wie eine innere Heizung wärmt und somit genau das Richtige für stürmisches Herbstwetter ist. </p>



<p>&#8230; die Suppe wirklich schnell zubereitet ist. Ich mache sie mir ganz oft mittags, wenn ich eigentlich keine Lust zum Kochen habe. Alle Zutaten kommen in einen Topf und somit ist auch der Abwasch minimal. </p>

<p>Wer meinen Blog schon länger verfolgt, weiß, dass ich ein großer Fan der asiatischen Küche bin. Die frischen und vielfältigen Gerichte begleiten mich schon seit Jahren und neben regionalen Speisen gibt es bei uns mehrfach wöchentlich auch immer Gerichte, die ursprünglich aus dem asiatischen Raum kommen. Gerade in den letzten grauen Wochen habe ich gespürt, wie ich mich auf den Frühling und seine frischen Farben freue. Warum also nicht mit diesem grandiosen Glasnudelsalat etwas frische Abwechslung in die wohlig warmen Wintergerichte bringen? </p>

<p>Wie der Name schon sagt, sind die Basis dieses aus Süd-Ost-Asien inspirierten Salates Glasnudeln. Glasnudeln werden im Vergleich zu Reisnudeln aus Mungbohnen hergestellt, sind meist dünner als die Reisvariante, aber mindestens genauso vielfältig einsetzbar. Toll an Glasnudeln ist auch, dass sie von Natur aus glutenfrei, reich an pflanzlichem Eiweiß und wertvollen Ballaststoffen sind. Und das Beste: Die Nudeln müssen nur mit heißem Wasser übergossen werden und sind schon nach fünf Minuten bereit zum Verzehr.</p>

<p>In diesem grandiosen Glasnudelsalat kombinieren wir die Mungbohnennudeln mit frischen Karotten und Gurke, etwas Babyblattspinat und leckerem Tempeh. Ja, richtig gelesen, statt Tofu ist neben den Glasnudeln der Tempeh in diesem Rezept der Star. Zwar wird Tempeh ebenfalls aus Sojabohnen hergestellt, aber anders als beim Tofu werden die gekochten Bohnen nicht püriert und gepresst. Stattdessen durchlaufen sie einen Fermentationsprozess und liefern damit besonders wertvolle Nährstoffe für unsere Darmflora. </p>

<p>Ursprünglich kommt Tempeh aus Indonesien, wo er an jeder Ecke zu finden ist und unter anderem im Nationalgericht Gado Gado verarbeitet wird. In Deutschland findet ihr Tempeh in den meisten Bioläden. Ich kaufe am liebsten den Bio-Tempeh der <a href="https://www.tempehmanufaktur.net/">Tempehmanufaktur</a> (über Denns Biomarkt, Alnatura). Die Tempehmanufaktur ist ein kleines Familienunternehmen aus dem Allgäu, das Tempeh aus Sojabohnen, aber auch aus Lupinen und Schwarzen Bohnen, herstellt. Es gibt bereits marinierte Varianten (mein Favorit ist die Gyros-Variante), aber auch Natur-Tempeh, den man selbst nach Lust und Laune würzen kann. </p>



<p>Abgerundet wird der Glasnudelsalat durch eine richtig leckere Erdnusssauce. Schon muss alles nur noch vermengt werden und ist bereit zum Genießen! Als Topping eignen sich Erdnüsse, Sesam und (wer mag) natürlich frischer Koriander.</p>

<h2 class="wp-block-heading">Himmlisch für Körper und Seele, weil &#8230;</h2>



<p>&#8230; dieser Salat total schnell geht, frisch schmeckt und durch seinen hohen (pflanzlichen) Eiweiß- und Ballaststoffgehalt in den Glasnudeln und im Tempeh trotzdem lange satt hält. </p>



<p>&#8230; der Tempeh sogar noch mehr wertvolle Proteine als Tofu liefert und als Fermentationsprodukt leichter bekömmlich und reich an wertvollen Darmbakterien ist. Zudem liefert er Magnesium, Phosphor und Kalium. </p>

<li id="instruction-step-1">Den Tempeh in mundgerechte Stücke schneiden und in etwas (Sesam)Öl anbraten, bis er goldbraun ist. Falls ihr ungewürzten Tempeh verwenden solltet, könnt ihr ihn z.B. mit etwas Tamari ablöschen.</li>
<li id="instruction-step-2">In der Zwischenzeit die Karotten und die Gurke waschen, ggf. schälen und in mundgerechte Streifen schneiden. Den Babyspinat waschen und trocken schleudern oder tupfen.</li>
<li id="instruction-step-3">Die Glasnudeln mit kochendem Wasser übergießen und je nach Pakungsanweisung ca. 5 min ziehen lassen. In der Zwischenzeit alle Zutaten für die Sauce miteinder vermengen.</li>

<li>  Ich habe bereits gewürzten Tempeh von der Tempehmanufaktur (bei Denns Biomarkt) verwendet. Meine liebste Variante ist der Soja-Tempeh mit Gyroswürzung. Als Altnerative zu Soja-Tempeh bietet die Tempehmanufaktur aber auch Tempeh aus Lupinen oder Schwarzen Bohnen an.</li>
<li> Falls ihr keinen Tempeh findet, könnt ihr auch Tofu nehmen. Sehr lecker schmeckt das Rezept auch mit meinem <a href="https://heavenlynnhealthy.de/der-weltbeste-tofu/">weltbesten Tofu.</a></li>
<li> Nicht alle Glasnudeln bestehen aus Mungbohnen. Einige bestehen auch aus Erbsen oder Mais. Ich empfehle Glasnudeln aus Mungbohnen.</li>

<p>Na, seid ihr auch so richtig im Summer-Mode? Ich muss zugeben, dass es mir zur Zeit echt schwer fällt, zu arbeiten, meine Masterarbeit zu schreiben und sonst so Erwachsenen-Dinge zu tun. Manchmal mag ich das ja auch, dieses Erwachsenen-Zeugs. Steuern, Versicherungen, Altersvorsorge &#8211; manchmal komme ich mir da total so vor, als hätte ich meinen Shit together. Naja, und manchmal halt nicht. Wie diese Woche. Da wurde uneinsortierte Post einfach in eine Kiste gelegt und der Deckel drüber verschlossen. Macht ihr das auch manchmal? Bitte sagt mir, dass ihr das auch manchmal macht.</p>

<p>Im Sommer gehe ich auch liebend gerne essen. Viel zu oft und viel zu gerne. Auch total unvernünftig, ich weiß. Doch in den letzten Wochen habe ich mal wieder an einem Rezept für ein mega leckeres asiatisches Nudelgericht gepfeilt, das wir viel lieber zu Hause gegessen haben als in irgendeinem Restaurant. Das Problem an Lüneburg ist leider auch, dass es eben nur einen Vietnamesen, nur einen Thailänder und ein gutes Sushi-Restaurant gibt. Nicht 10 oder 50 wie in Hamburg und Co. Wir haben hier in Lüneburg zwar einen guten Vietnamesen, nur leider vertrage ich dort das Essen nicht so gut. Wahrscheinlich wird Glutamat und viel Zucker verwendet, das konnte man mir auf Nachfrage nicht so eindeutig beantworten. Deshalb mache ich mir doch am liebsten mein asiatisches Essen selber. So wie die heutigen asiatischen Sesam-Nudeln.</p>



<p>Die Sesam-Nudeln sind ruck zuck zubereitet, können je nach Geschmack abgewandelt werden und schmecken himmlisch. Ich verspreche es euch. Jannis und ich haben die so oft getestet, dass wir 200% überzeugt sind. Übrigens könnt ihr das Rezept auch mit verschiedenen Nudelarten machen: </p>



<ol class="wp-block-list">
<li>Vollkorn-Mie Nudeln von Albgold (gibt’s im Bio-Laden). Gibt’s aus Dinkel (Nicht-Vollkorn) und Weizen (Halb-Vollkorn). </li>



<li>Dicke Reisnudeln aus dem Asia-Laden. Die sind zwar nicht Vollkorn, aber meine Favoriten, weil sie nicht so schnell zermatschen. </li>



<li>Dünne Vollkorn-Reisnudeln von Arche Naturküche, ebenfalls aus dem Bio-Laden. Die sind gesundheitlich die beste Option, da sie durch den Vollkorn-Reis noch ein paar mehr Ballaststoffe enthalten, die länger sättigen. Leider sind die aber so dünn, dass man auch schnell Matschepampe hat. </li>



<li>Vollkorn-Buchweizen-Spaghetti von Alnavit, (gibt’s bei Alnatura und teils bei Dm), die ich auch sehr liebe. Buchweizen ist übrigens prima bei kardiovaskulären Erkrankungen wie Bluthochdruck, weshalb ich diese Nudeln immer vorrätig habe. </li>



<li>Natürlich könnt ihr das Gericht auch mit normalen Spaghetti zubereiten.</li>

<li id="instruction-step-1" class="MsoNormal">Für die Nudeln, ca. 1,7 l Wasser aufkochen und die Nudeln darin ca. 7 – 10 Minuten einweichen lassen. Ich schneide sie nach ein paar Minuten mit der Schere durch, damit sie nicht an den Enden zusammenkleben.</li>
<li id="instruction-step-2" class="MsoNormal">Das Gemüse waschen und entweder spiralisieren oder mit einem Sparschäler in dünne Streifen schneiden. Die Paprika in dünne, lange Streifen schneiden.</li>
<li id="instruction-step-3" class="MsoNormal">Für die Sauce den Ingwer und die Knoblauchzehe fein hacken und mit den anderen Zutaten gut verrühren.</li>
<li id="instruction-step-4" class="MsoNormal">Falls ihr Spinat benutzt, dann wascht ihn jetzt, schneidet die Frühlingszwiebeln in Ringe und hackt die Kräuter fein. Auch Tofu, Lachs oder Pilze jetzt zubereiten.</li>
<li id="instruction-step-5" class="MsoNormal">Ca. 1 EL Sesamöl in einer großen Pfanne oder Wok erhitzen und das Gemüse darin auf mittlerer Hitze ca. 2 – 3 Minuten anbraten. Die abgeschreckten Nudeln, die Sauce und den Spinat (wenn benutzt) dazugeben und alles kurz aufkochen. Die Hitze reduzieren und die Nudeln noch ca. 1 Minute in der Sauce schwenken. Nicht zu lange, sonst wird es zu matschig.</li>
<li id="instruction-step-6" class="MsoNormal">Etwas Limettensaft oder Zitronensaft über die Nudeln geben und mit Sesam, Frühlingszwiebeln und Kräutern servieren. Lachs, Tofu oder Pilze über den Nudeln verteilen und genießen.</li>
