<p>So simpel, so winterlich, so lecker.</p>
<p>Ich muss ja zugeben, ich bin eigentlich kein Fan von großen Festtagsmenüs. Einfach, weil ich an Weihnachten lieber Zeit mit meiner Familie verbringe als stundenlang in der Küche. Gut, an Weihnachten heißt Zeit mit der Familie verbringen aber auch gleichzeitig Zeit in der Küche zu verbringen, denn bei uns wird auf jedes Familienmitglied Rücksicht genommen. Dieses Jahr wird es deswegen wieder etwas „normaleres“ geben, wahrscheinlich doch Raclette und eine Miso-Lachssuppe von mir, sowie ein paar leckere Beilagen. So auch diesen gerösteten Rosenkohl mit Kürbis und Pekannüssen. Das Gericht hat minimale Vorbereitungszeit und schmeckt aber 100% exquisit und aufwendig.</p>

Ich kombiniere tatsächlich gerne Gewürze, die man mir in der Haute Cuisine wahrscheinlich an den Kopf knallen würde. In diesem Gericht sind es beispielsweise Rosmarin und Zimt. Ich LIEBE dieses subtile Kombination und ich bin mir sicher, das werdet ihr auch.</p>

<h2>Wie ihr die Festtage gesund übersteht</h2>
<p>Bevor ich euch heute ins Wochenende entlasse, wollte ich mir noch etwas vom Herzen schreiben. Ich habe in den letzten Wochen diverse Emails von Leserinnen erhalten, die mich gefragt haben, wie ich mit dem ganzen ungesunden Festtagsessen umgehe. Die Antwort ist: ich genieße die Feiertage. Ich mache mir keine Gedanken über ungesundes Essen, sondern esse, was mir schmeckt. Natürlich gibt es bei uns auch viel Gemüse, Obst und gesunde Speisen an Weihnachten, doch wird es auch einige traditionelle Leckereien geben. Am zweiten Weihnachtsfeiertag sind wir zum Kaffee und Kuchen beim Bruder meines Freundes eingeladen. Ich bringe einfach ein paar Plätzchen mit ohne groß anzukündigen, dass diese aus gesünderen Zutaten bestehen.</p>
<p>Ebenfalls ist es für meine Familie und mich wichtig, dass wir uns morgens gleich bewegen. Wir gehen alle zusammen Laufen und frühstücken dann ausgiebig und gesund, sodass wir meistens eh erst abends wieder groß essen. Es geht an Weihnachten nicht darum der gesündeste zu sein, aber ein wenig Bewegung hier und da schadet nie.</p>

<li id="instruction-step-1">Den Backofen auf 200°C (180°C Umluft) vorheizen.</li>
<li id="instruction-step-2">Die Enden des Rosenkohls abschneiden und den Rosenkohl halbieren. Den Kürbis in mundgerechte Stücke schneiden. Bei Butternut muss der Kürbis geschält werden.</li>
<li id="instruction-step-3">Rosenkohl und Kürbis mit allen Zutaten bis auf die Pekannüsse in einer Schüssel vermengen und auf einem mit Backpapier ausgelegtem Backblech verteilen.</li>
<li id="instruction-step-4">Alles ca. 30 Minuten im Backofen rösten. In der Zwischenzeit die Pekannüsse grob hacken.</li>
<li id="instruction-step-5">Die Pekannüsse zu dem Rosenkohl und Kürbis geben und weitere 5 Minuten mit rösten.</li>

Der Mix aus den Gewürzen Sumach, Thymian und geröstetem Sesam passt meiner Meinung nach zu so vielen Gerichten und wertet diese geschmacklich absolut auf. <span id="more-3723"></span></p>
<p>Eines meiner ersten Rezepte auf diesem Blog war dieses <a href="https://heavenlynnhealthy.de/hirse-taboule/">Hirse-Taboulé</a>. Wenn man einmal von den schrecklichen Fotos absieht, ist es immer noch eins meiner Lieblingsgerichte. Da Quinoa aber viel prominenter als Hirse ist, zumindest im Moment, gibt es heute eine Variante mit Quinoa und Za&#8217;atar. Quinoa ist nicht zu unrecht so populär zur Zeit. Es enthalt alle essentiellen Aminosäuren, was es zu einem kompletten Protein macht. Es ist von Natur aus glutenfrei, kann also ohne Bedenken von Menschen, die unter Zöliakie leiden gegessen werden. Es sei denn du bist meine Schwester und hast dir das leckere &#8222;Korn&#8220; übergegessen. Dann empfehle ich dir wie gesagt, mein Hirse-Taboulé.</p>

<p>Was ich an Taboulé so liebe, ist, dass der Salat eigentlich komplett aus Petersilie besteht. Petersilie wird übrigens in den USA gerade als das neue Superfood gehyped &#8211; das heißt, der &#8222;Back to the Roots&#8220;-Trend bleibt weiterhin bestehen. Nach Grünkohl kam die Brunnenkresse und jetzt eben die Petersilie. Wie die meisten grünen Pflanzen, strotzt Petersilie nur so vor Vitamin K, was wichtig für unsere Blutgerinnung und starke Knochen ist. Petersilie enthält ebenfalls eine stolze Menge Vitamin C, Vitamin A und viele weitere Mineralstoffe und Spurenelemente.</p>

<li id="instruction-step-1">Das Quinoa abspülen, in einem Kochtopf geben und mit circa 200 ml Wasser bedecken. Circa 12 &#8211; 15 Minuten kochen oder bis sich um das Korn kleine Ringe gebildet haben. Abgießen und zur Seite stellen.</li>
<li id="instruction-step-2">Das Gemüse waschen und in kleine Stücke schneiden. Die Kräuter waschen, trocknen und fein hacken. Alles in eine Salatschüssel füllen.</li>
<li id="instruction-step-3">Das Dressing zusammen geben und über dem Salat verteilen. Zum Schluss das Za&#8217;atar drüberstreuen.</li>
<li id="instruction-step-4">Sofort servieren oder kalt stellen.</li>

<h4>Für die Za&#8217;atar Gewürzmischung</h4>
<ol>
<li id="instruction-step-5">Den Sesam in einer Pfanne auf mittlerer Hitze rösten, bis er gold-braun ist. Vom Herd nehmen und in einer Schüssel abkühlen lassen. Die anderen Gewürze dazugeben und gut vermengen. Luftdicht verschlossen hält sich Za&#8217;atar viele Monate.</li>

Die Avocados werden nur kurz angegrillt, damit sie etwas aufwärmen und den typischen rauchigen Geschmack von gegrilltem annehmen. Die schwarzen Streifen sind schön anzusehen, aber natürlich kein muss. Die Füllung besteht aus einer sehr traditionellen Bruschetta-Füllung aus Tomaten, Basilikum, Knoblauch und nativem Olivenöl. Das Rezept ist so himmlisch simpel, dass es garantiert jedem gelingt, auch wenn man noch so wenig Erfahrung in der Küche (oder am Grill) hat. Die gegrillten Avocado-Bruschetta werden garantiert ein Hingucker sein und eure Gäste oder Familie beeindrucken.</p>

<p>Ich hab neulich mal ein bisschen gerechnet und festgestellt, dass ich mehr Geld für Avocados ausgebe als fürs Ausgehen. Ziemlich traurig, was? Aber ich sehe Avocados als eine Art Krankenversicherung, denn immerhin können die gesunden Fette in Avocados unser Herz ja vor Krankheiten schützen. Deswegen sehe ich mein Geld weiterhin sehr gut in Avocados investiert. Habt ihr Tipps wo man günstige Avocados kaufen kann? Eine Freundin hat mir neulich den Fischmarkt in Hamburg nahegelegt, weil man dort wohl gegen Ende mehrere Avocados für 1 oder 2 Euros kaufen kann. Das würde meinen Geldbeutel definitiv erleichtern. Andere Tipps für geldbeutelfreundliche Avocado-Einkäufe?</p>
