<p>Gerade wollte ich in die Küche gehen und neue Rezepte für den Blog vorbereiten. Ich fing an, eine vegetarische Paella vorzubereiten und merkte auf einmal, wie schwer meine Arme waren. Ich hatte in dem Moment überhaupt keine Lust auch nur ein bisschen zu kochen. Nicht mal Frühstück vorzubereiten hatte ich Bock drauf.</p>
<p>Die letzten Monate habe ich jeden Tag mindestens zwei Gerichte gekocht, fotografiert, wieder gekocht und wieder fotografiert. Jetzt ist die Luft raus. Deshalb habe ich beschlossen, dass die Küche für ein paar Wochen kalt bleibt. Das heißt nicht, dass ich gar nicht kochen werde, aber ich werde einfach mal selber meine Gerichte vom Blog kochen und mich daran erfreuen. Vielleicht koche ich auch mal richtig nach Rezept aus meinen tausend Kochbüchern.</p>
<p>Einfach mal eine Pause vom ständigen Kochen – Stylen- Fotografieren. Beim Buch hatte ich nämlich bis auf zwei Ausnahmen überhaupt keine Hilfe. Somit ist das Buch auch wirklich mein Werk, aber zwischendurch dachte ich schon: och, nur die Rezepte zu entwickeln und sie andere stylen und fotografieren zu lassen, hätte jetzt auch was. Da wir aber ein sehr knappes Budget zur Verfügung hatten, war das einfach nicht drin.</p>

Keine lange, ausgiebige Pause. Einfach ein, zwei Wochen bis Ostern, um wieder zu Kräften zu kommen. Zeit, um mir neue, spannende Rezepte auszudenken, um Bücher zu lesen, die ich immer schon lese wollte. Zeit, um an neuen Posts für Heavenlynn Healthy zu arbeiten.</p>
<p>Morgen geht’s für eine Woche mit meiner Mama in den Urlaub. Gesundes Essen, Yoga, Pilates, Laufen auf der Promenade. Danach ist mir gerade. Ich bin mir sicher, dort werden neue Ideen nur so sprudeln.</p>

<li id="instruction-step-1">Den Backofen auf 160 °C Umluft (180 °C Ober- und Oberhitze) vorheizen.</li>
<li id="instruction-step-2">Die Mandeln in einem Food Processor oder Mixer mahlen und in eine Rührschüssel umfüllen. Vollkornreismehl, Pfeilwurzelstärke, Backpulver, Gewürze und eine Prise Meersalz hinzugeben und mit einem Schneebesen sorgfältig vermengen.</li>
<li id="instruction-step-3">Das Kokosöl ein wenig erwärmen und mit der Banane, dem Kokosblütenzucker, der Hafermilch, dem Mineralwasser sowie der Zitronenschale in einem Food Processor oder Mixer vermengen. Alternativ die Banane mit einer Gabel fein pürieren und mit den anderen Zutaten mit einem Handrührgerät vermengen. Die flüssigen Zutaten zu den trockenen geben und kurz mit dem Handrührgerät oder im Food Processor verrühren. Nicht zu lange verrühren, da die Muffins sonst einfallen könnten.</li>

<li id="instruction-step-6">Die Muffins 25–35 Minuten backen. Sie sind gar, wenn an einem Holzstäbchen keine Teigreste mehr kleben bleiben. Aus dem Ofen nehmen und die Muffins auf einem Kühlrost erkalten lassen.</li>
<li id="instruction-step-7">Für das Frosting alle Zutaten vermengen. Jeden Cupcake mit zwei Teelöffeln Frosting bedecken und mit ein wenig Zimt bestreuen. Zur Deko mit ein bisschen Zitronenschale bestreuen.</li>

Meine absolute Nummer Eins war deshalb auch lange Zeit der Double Layer Carrot Cake von der Cheesecake Factory in den USA. Sollte ich demnächst mal wieder dort sein, werde ich wohl wieder schwach werden, aber ich weiß genau, wie ich mich danach fühle. Total vollgefressen und zu Nichts mehr in der Lage. Ein Gefühl, das ich bei den meisten Kuchenstücken habe &#8211; nicht aber bei diesem gesunden Carrot Cake, denn ich darf noch einmal wiederholen, dass er ja der beste gesunde Carrot Cake der Welt ist&#8230;</p>

<p>So, was ist denn nun das besondere an diesem Kuchen. Also, er besteht eigentlich aus drei Teilen: den geriebenen Karotten (duh!) und Nüssen, Buchweizen-, Vollkornreismehl und diversen Gewürzen und selbst gemachter Mandelsahne. Diese verleiht dem Kuchen diese unglaubliche Saftigkeit. Apfelmus dient hier sowohl als natürliches Süßungsmittel als auch als Eiersatz, der alle Zutaten bindet. Der Guss besteht aus einer Mischung aus Cashewkernen, Orange und Kokosmilch und muss unbedingt mitgemacht werden, denn sonst ist es nicht der weltbeste gesunde Carrot Cake.</p>

Um dem Kuchen die nötige Saftigkeit zu geben, reicht normale Mandelmilch leider nicht aus, da diese nicht cremig genug ist. Mandelsahne könnt ihr meines Erachtens nur in ganz wenigen Bio-Supermärkten kaufen (und dann enthält sie meistens unschöne Zusatzstoffe), deswegen schreibe ich unten auf, wie ihr ganz leicht eure eigene Mandelsahne herstellen könnt. Alles was ihr dafür braucht sind Mandeln, Zitronensaft, ein Süßungsmittel, sowie einen normalen Mixer, der auch gar nicht extrem stark sein muss. Eigentlich wird dann nur alles vermengt und kurze Zeit stehen gelassen, damit es etwas andickt &#8211; et voilà. Fertig ist die Mandelsahne, die geheime Zutat in diesem Kuchen.</p>

<p>Lasst euch bitte nicht von der langen Zutatenliste abschrecken. Bei Gewürzkuchen wie diesem hier sind alleine sieben Zutaten Gewürze, Backpulver oder Zitronensaft, die man meistens eh vorrätig hat. Dann gehört auf jeden Kuchen natürlich auch ein Guss, somit verlängert sich die Liste nochmals um eine Reihe von Zutaten, die aber wiederum auch in vielen gesunden Haushalten vorrätig sind. Also verurteilt den Kuchen bitte nicht aufgrund seiner langen Zutatenliste, denn hier macht jede Zutat den Kuchen einfach noch besser.</p>

<li id="instruction-step-1">Die Cashewkerne komplett mit Wasser bedecken und ca. 2 &#8211; 3 Stunden einweichen lassen. Zusammen mit den restlichen Zutaten in einem Mixer vermengen und zur Seite stellen.</li>
<li id="instruction-step-2">Bereitet die Mandelsahne zuerst zu, damit diese andicken kann. Dafür die Mandeln ca. eine Stunden in Wasser einweichen. Das Wasser abgießen und die Mandeln zusammen mit den anderen Zutaten in einen Mixer geben und fein pürieren. Umfüllen und im Kühlschrank stehen lassen.</li>
<li id="instruction-step-3">Den Backofen auf 180°C vorheizen. Eine Springform mit Kokosöl einfetten.</li>
<li id="instruction-step-4">Die Karotten fein reiben. Die Pekannüsse mit dem Messer grob hacken oder im Food Processor kurz zerkleinern. Beides zur Seite stellen.</li>
<li id="instruction-step-5">Die trockenen Zutaten (Vollkorn-Reismehl), Buchweizenmehl, Weinstein Backpulver, Natron, Gewürze, Ingwer und Vanille in eine Schüssel geben und gut vermengen. Die Mandelsahne, Apfelmark und Zitronensaft unterrühren, bis ihr einen schön klebrigen Teig habt. Zum Schluss die geriebenen Karotten und Pekannüsse unterheben. Den Teig in eine eingefettete oder mit Backpapier ausgelegte runde Springform geben und ca. 40 Minuten backen.</li>
<li id="instruction-step-6">Den Kuchen aus dem Ofen holen, abkühlen lassen und großzuügig mit dem Frosting bedecken. Wer mag kann noch gehackte Pekan- oder Walnüsse aus Topping oben drüber streuen.</li>

<p>Genau das ist das Feine an diesem Oatmeal. Es besteht zu einem Großteil aus geriebenen Karotten und schmeckt trotzdem himmlisch süß und lecker. Das mag vor allem an der natürlichen Süße der Karotten liegen, aber natürlich auch an den Haferflocken und dem Honig (oder Ahornsirup).</p>

<p>Ich bin seit diesem Carrot Cake Oatmeal totaler Fan von Gemüse zum Frühstück geworden. Kürbispüree mochte ich immer schon in meinen Haferflocken und auch geriebene Zucchini Oats (kurz auch Z&#8217;Oats genannt) habe ich schon einmal ausprobiert und als lecker empfunden. Karotten sind aber das absolute Anfängergemüse und deswegen denke ich, dass dieses Rezept bestens für Einsteiger geeignet ist.</p>



<p>Das Oatmeal ist wirklich schnell gemacht und deckt zum anderen gleich einmal den halben Tagesbedarf an Beta-Carotin, einem Vorboten des Vitamin A. Beta-Carotin wird im Körper in Vitamin A umgewandelt, welches extrem wichtig für ein gesundes Augenlicht sowie ein intaktes Immunsystem ist. Ich konnte mir das immer schon früher ganz gut merken, weil meine Omi sich bei Douglas immer so eine „Beta-Carotin“-Creme hat andrehen lassen, die ihr gesamtes Gesicht orange gefärbt hat. Es hat ne Weile gedauert bis wir ihr diese Creme ausreden konnten und ab dann gab es Beta-Carotin Tabletten für die Oma Helga.</p>



<p>Die Karotten werden für das Oatmeal einfach nur gerieben und zusammen mit den anderen Zutaten kurz aufgekocht. Verfeinert mit Zimt, Kardamom und Ingwer, Honig und ein paar gerösteten Walnüssen schmeckt es fast wie Rüblikuchen. So beginnt ihr den Tag mit einer Portion Gemüse und müsst abends kein schlechtes Gewissen haben, wenn es mal kein Gemüse gibt.</p>

<li id="instruction-step-2" class="MsoNormal">Haferflocken zusammen mit der Hafer- oder Mandelmilch und den geriebenen Karotten in einen kleinen Kochtopf geben und kurz auf hoher Hitze aufkochen.</li>
<li id="instruction-step-3" class="MsoNormal">Die Hitze reduzieren und die Gewürze und den frischen Orangensaft dazugeben und unter ständigem Rühren mit dem Kochlöffel vermengen. Sollte eurer Haferbrei am Topf kleben bleiben, dann gebt einfach ein bisschen mehr Mandelmilch oder etwas mehr Orangensaft dazu. Das Oatmeal sollte ca. 8 – 10 Minuten auf niedriger Hitze köcheln und dabei ständig umgerührt werden.</li>

<li id="instruction-step-5" class="MsoNormal">Die Walnüsse ohne Fett in einer Pfanne ca. 4 Minuten rösten und zusammen Bananenscheiben oder Apfelstücken zum Oatmeal servieren.</li>

<p>Natürlich könnt ihr das Oatmeal auch mit anderen Toppings eurer Wahl dekorieren.</p>
