<p>Es fühlt sich schon komisch an, aus 30 Grad Celcius in Franschhoek, Südafrika, eine Weihnachtskolumne anzukündigen. Doch während ihr das hier lest, bin ich schon wieder auf dem Weg nach Deutschland. Höchste Zeit also, sich in Novemberstimmung zu begeben. Es tat gut vor dem Winter noch einmal so richtig Sonnenstrahlen zu tanken. Es tat besonders mir gut, mal wirklich zwei Wochen abzuschalten. Nicht einmal Emails habe ich groß beantwortet. So kurz vor dem Weihnachtstrubel noch einmal inne zu halten, zu reflektieren und ganz viele neue Inspirationen aufzusaugen, war ein Privileg.</p>

<p>Jetzt freue ich mich wirklich riesig auf die bevorstehende Vorweihnachtszeit. Auch wenn die Medien Weihnachten häufig als puren Konsum betiteln, bedeutet Weihnachten für mich besonders Kerzenschein, warmen Tee, Lichter und Besinnlichkeit. Dabei finde ich die Vorweihnachtszeit viel schöner als das wirkliche Fest. Das ist auch bei uns irgendwie immer stressig und gar nicht so besinnlich, wie man sich das wünscht. Deswegen ist mir die Vorweihnachtszeit mit all ihren Plätzchen, Stollen und Adventskaffeetrinken heilig.</p>

<p>Passend fürs Adventskaffeetrinken teile ich heute drei einfache, aber dennoch raffinierte Ideen für die Weihnachtsbäckerei. Es gibt würzige Chai-Waffeln, die besten weihnachtlichen Energy-Balls der Welt und mein heimlicher Favorit: selbst gemachte Choco-Crossies. Die Chai-Waffeln gibt es in zwei Versionen (einmal mit Eiern, einmal vegan) und alles andere ist komplett pflanzlich, ohne raffinierten Zucker. Wenn man glutenfreie Haferflocken benutzt, dann sind auch alle Rezepte glutenfrei. Oh, so macht Weihnachten Spaß!</p>

<li id="instruction-step-1" class="MsoNormal">Für eine vegane Version, die Chiasamen mit dem Wasser vermengen und zum Quellen zur Seite stellen.</li>
<li id="instruction-step-2" class="MsoNormal">Alle Zutaten für das Chai-Gewürz vermengen und in einem luftdichten Glasbehälter aufbewahren. Das Waffeleisen auf mittlerer Stufe vorheizen.</li>

<p class="MsoNormal">Die Haferflocken in einem Food Processor oder einem Mixer zu einem feinen Mehl zerkleinern. In einer Schüssel das Hafermehl, Kokosblütenzucker, Weinstein-Backpulver, Chai-Gewürz und Meersalz sorgfältig vermengen. In einer weiteren Rührschüssel den (Kokos-) Joghurt, die Hafermilch und die drei Eier (oder Chia-Eier) und die Zitronenschale mit einem Schneebesen verrühren. Anschließend das Mineralwasser kurz unterrühren.</p>

<p class="MsoNormal">Die nassen Zutaten über die trockenen geben und alles mit einem Schneebesen zu einem glatten Teig verrühren. Den Teig ca. 30 Minuten ruhen lassen. In dieser Zeit die gefrorenen Beeren in einer Pfanne langsam erhitzen und mit etwas Chai-Gewürz vermengen. In der warmen Pfanne lassen, um die Beeren für später warmzuhalten.</p>

<p class="MsoNormal">
<p class="MsoNormal">Das Waffeleisen etwas stärker erhitzen und ca. 1 TL Kokosöl hineingeben und das Öl mit einem Backpinsel oben und unten gründlich verteilen. Eine Kelle Teig pro Seite (bei einem belgischen Waffeleisen) hineingeben und ca. 5 Minuten backen. Bei einem Herz-Waffeleisen braucht man weniger Teig und die Backzeit pro Waffel reduziert sich entsprechend. Die Waffeln sind fertig, wenn sie goldbraun gebacken sind und sich leicht vom Waffeleisen lösen lassen. Ich lasse sie sogar gerne etwas krosser werden. Die Waffeln mit dem warmen Beeren-Kompott, Joghurt und gehackten Nüssen servieren.</p>

<li id="instruction-step-1" class="MsoNormal">Wenn ihr die Schokolade selbst macht, dann fangt damit zuerst an. Die Kakaobutter im Wasserbad vorsichtig schmelzen. Den rohen Kakao und Ahornsirup unterrühren und gut abkühlen lassen. Durch das Abkühlen wird die Masse etwas dickflüssiger, was bei den Choco-Crossies hilft.</li>
<li id="instruction-step-2" class="MsoNormal">Die Cornflakes mit den Mandelstiften und dem Zimt in einer Schüssel vermengen. Die selbst gemachte Schokolade direkt mit den Zutaten vermengen oder die gekaufte Schokolade zuerst im Wasserbad schmelzen und mit den trockenen Zutaten vermengen. Mit einem Teelöffel kleine Häufchen der Masse auf einem Backblech mit Backpapier verteilen. Falls ihr, so wie ich, nur einen kleinen Kühlschrank habt, dann schneidet Backpapier zurecht und legt es auf Teller und gebt die Choco-Crossies auf die Teller.</li>
<li id="instruction-step-3" class="MsoNormal">Das Blech oder die Teller ca. 1 Stunde zum Abkühlen in den Kühlschrank geben.</li>

<li id="instruction-step-1" class="MsoNormal">Die Mandeln und Apfelchips zuerst in den Food Processor geben, kurz pulsieren und umfüllen.</li>
<li id="instruction-step-2" class="MsoNormal">Die Datteln entsteinen (nicht vergessen!) und im Food Processor kurz aber sorgfältig zu einer klebrigen Masse vermengen. Die Mandelstückchen und Apfelchips sowie Lebkuchen-Gewürz dazugeben und alles miteinander vermengen. Optional kann noch ein Tropfen Orangenöl dazugeben werden. Vorsicht bei der Portionierung!</li>
<li id="instruction-step-3" class="MsoNormal">Aus dem Teig ca. 10-12 Bällchen formen. Optional jedes Bällchen in dem Kakaopulver rollen und zwischen den Händen weiter rollen. Durch die Wärme der Hände wird das Kakaopulver leicht in die Bällchen eingearbeitet und staubt dann nicht mehr so.</li>
