Aber das ist ja eigentlich überhaupt nicht schlimm, weil es nichts besseres als Hummus und Zucchini gibt. Solltet ihr am Samstag wieder eine kleine Party feiern wollen (WM hin oder her), dann probiert euch doch mal in diesen ober leckeren Zucchini Röllchen. <p>Alles was ihr für diese Röllchen braucht ist ein Sparschäler, Hummus, Basilikum und Pinienkerne. So einfach, so simpel. Ich bin ja Team Hummus Selbermachen, da man dann genau weiß was drin ist. Ich habe nämlich bisher keinen Hummus aus dem (Bio-) Supermarkt gefunden, der keinen Zucker oder komische Zusatzstoffe enthält. Solltet ihr eine gute Marke kennen, dann lasst es mich gerne wissen. Wenn man jedoch eine Party schmeißt, oder wenn man keinen guten Food Processor besitzt, dann finde ich es überhaupt nicht schlimm, wenn man Hummus im Supermarkt kauft. Dann gehen diese Zucchini Röllchen so schnell, dass ihr ganz viel Zeit für andere kleine Finger Foods habt. Hummus selber machen dauert allerdings auch weniger als 5 Minuten &#8211; also traut euch ruhig ran!</p>

<p>Damit diese Röllchen extra aromatisch schmecken, habe ich meinen normalen Hummus mit einer Handvoll Basilikum vermengt. Durch den frischen und sommerlichen Basilikum-Geschmack werden die Röllchen noch einmal richtig aufgewertet. Zusätzlich habe ich ein Basilikum-Blatt in jedes Röllchen gewickelt. So muss man sich nicht, wie beim Tomate-Mozarella-Salat um die zwei, drei Basilikum-Blätter auf dem Teller streiten. Für jeden Gast ist genug Basilikum da! Ziemlich genial, wenn man so wie ich ein Basilikum-Fan ist.</p>

<li id="instruction-step-1">Die Pinienkerne in einer Pfanne ohne Öl ca. 5 Minuten goldbraun rösten. Nicht aus den Augen lassen, weil sie sehr schnell anbrennen.</li>
<li id="instruction-step-2">Die Zucchini gut waschen und beide mit dem Sparschäler in breite Streifen schneiden. Die ersten beiden Streifen weglegen, weil die meist zu dünn sind. Die kann man aber in dickere mit einrollen. Sobald auf einer Seite die Kerne sichtbar sind, die Zucchini umdrehen und auf der anderen Seite weitermachen. Je dichter die dünnen Kerne kommen, desto dünner werden die Scheiben. Den inneren Teil könnt ihr pur essen oder in meinem <a href="https://heavenlynnhealthy.de/zucchini-hummus-finger-food/" target="_blank">Zucchini Hummus</a> verarbeiten.</li>
<li id="instruction-step-3">In einem Food Processor, den Hummus mit den Basilikum-Blättern vermengen. Solltet ihr gekauften Hummus verwenden, dann schneidet die Basilikum-Blätter klein und vermengt sie mit dem Hummus.</li>
<li id="instruction-step-4">Die Zucchini-Scheiben auf ein Brett oder einen Teller nebeneinander aufreihen. Dieser Schritt spart euch Zeit beim Rollen. Pro Röllchen einen Teelöffel Hummus an ein Ende der Scheiben platzieren. Ein paar Pinienkerne drüberstreuen und mit einem Basilikum-Blatt bedecken. Die Röllchen dicht aufrollen. Die anderen Scheiben genauso vorbereiten und nacheinander aufrollen. Die Zucchini-Scheiben solltet eigentlich gut am Ende kleben. Sollte dies nicht der Fall sein, dann befestigt das eine Ende der Scheiben mit einem Klecks Hummus an den Röllchen.</li>
<li id="instruction-step-5">Man kann die Zucchini-Röllchen auch gut einen Tag in einem luftdichten Container im Kühlschrank lagern, also am Vortag vorbereiten.</li>

Heute dreht sich alles um das Thema &#8211; wie kann ich mehr Gemüse in meine Ernährung integrieren? Ich liebe Gemüse ja, aber es gibt viele Menschen, die sich damit immer noch schwer tun. Deshalb gibt es heute einen fast rohen Zucchini-Hummus, der &#8211; ihr könnt es euch wahrscheinlich schon denken &#8211; nicht nur aus Kichererbsen besteht, sondern auch aus ganz viel Zucchini. <span id="more-7308"></span>Zuerst muss ich gestehen, dass ich aus dem Rezept eigentlich einen komplett rohen Zucchini Hummus machen wollte. Von der Konsistenz und allem hat das auch echt gut geklappt, nur leider war der Geschmack zu bitter. Das liegt daran, dass, wenn man nur Zucchini als Basis verwendet, der bittere Geschmack des Tahinis sehr dominant ist. Ich fand es immer noch sehr lecker und bitter ist ja auch gesund, aber ich denke nicht, dass er bei euren Gästen so gut ankommen würde. Deswegen habe ich in diesem Rezept zur Hälfte Kichererbsen und zur Hälfte rohe Zucchini benutzt. So kann man seinen Gästen &#8222;sneaky&#8220; ein bisschen mehr Gemüse unterjubeln, ohne dass sie es sofort merken.</p>

Tahini (eigentlich heißt er Tahin auf deutsch, aber ich finde das irgendwie blöd auszusprechen), bekommt ihr in geschälter und ungeschälter Form in Bio-Läden. Ich benutze eigentlich am liebsten den ungeschälten, da dieser die ganzen Sesam-Saaten enthält, also mit Schale. Und wir wissen ja alle, dass in der Schale von so gut wie jedem Lebensmittel die Nährstoffe sitzen. Doch da es ja auch schmecken soll, ist das geschälte Tahini definitiv die bessere Wahl für dieses Rezept. Wenn ihr zu Hause allerdings schon ungeschälten habt, dann lauft nicht panisch los und kauft neuen, sondern verwendet von dem ungeschälten einfach etwas weniger.</p>

Der Haupt-Mineralstoff in Tahini (bzw. in Sesam) ist nämlich Calcium. Calcium ist natürlich super wichtig für gesunde Knochen und Zähne, das wissen wir alle, doch wusstet ihr auch, dass es eines der wichtigsten Mineralstoffe für den Ausgleich des Säuren-Basen-Haushaltes ist? Wenn wir nämlich einen Überschuss an sauren Lebensmitteln (verarbeitete Lebensmittel, Fast Food, Getreide) zu uns nehmen und zu wenig basische Lebensmittel in unseren Speiseplan integrieren (Gemüse, Blattgemüse, Beeren, Kartoffeln), dann kann es dazu kommen, dass wir &#8222;übersäuern&#8220;. Von einer Übersäuerung spricht man, grob gesagt, wenn das Blut zu sauer ist. Das will unser Körper aber mit allen Mitteln verhindern, denn eine Übersäuerung kann zu einer Unterversorgung des gesamten Körpers mit Sauerstoff führen. Unser schlauer Körper nimmt sich deshalb gespeicherte Mineralstoffe aus den Knochen, den Zähnen oder den Haarwurzeln, wo besonders viel Calcium gespeichert ist um einer Übersäuerung entgegen zu wirken.</p>

Natürlich ist der Säuren-Basen-Haushalt ein sehr komplexes Thema, mit dem man definitiv mehr als nur einen Absatz füllen kann. Aber ich denke, man versteht dadurch ganz gut, wie toll unser Körper eigentlich ist. Hallo, er gibt einfach jeden Tag alles für uns. ALLES! Und wir behandeln ihn immer so schlecht. Märkeln an ihm herum. Dabei liebt uns unser Körper einfach so viel mehr als wir ihn lieben. Ich bin deswegen schon lange auf der Mission, Körperliebe. Ich bin immer wieder begeistert, was unser Körper eigentlich alles für uns tut und bin der Meinung, dass wir ihn viel mehr dafür feiern sollten. Macht ihr mit?</p>

<p>Leute, zur Zeit bin ich richtig k.o. Neben Umzug, meinem Studium, meiner Weiterbildung und einem anderen sehr aufregenden Projekt, komme ich kaum noch dazu durchzuatmen. Ich weiß, dieser Blog soll ein Happy Place sein und ihr kommt hier nicht her, um mich jammern zu hören. Beschweren will ich mich auch gar nicht, denn ich mache zur Zeit wirklich nur Dinge, die ich liebe, doch trotzdem wächst mir irgendwie alles gerade alles über den Kopf. Der Höhepunkt meiner derzeitigen Gefühlssituation war ein Tränenausbruch bei IKEA letzten Samstag. Ich konnte nicht mehr. Es war ein totales Desaster und es ist ein Wunder, dass Jannis und ich das Möbelhaus überhaupt noch als Pärchen verlassen haben. Na gut, so dramatisch war es vielleicht doch nicht, aber irgendwie haben mich all die Entscheidungen, die zur Zeit getroffen werden müssen, total umgehauen. Generell mag ich es gar nicht Entscheidungen zu treffen und besonders nicht bei so großen Dingen wie Umzügen und Lebensplanung. Sicher, ein PAX-Schrank ist lächerlich im Vergleich zu den richtig großen Problemen im Leben, aber er stand symbolisch für alle Entscheidungen, die ich gerade treffen muss und nicht treffen will.</p>
<p>Nun frage ich mich wirklich, wie all ihr Menschen dort draußen es jeden Tag schafft, Entscheidungen zu treffen, euren Kindern gerecht zu werden, die Doktorarbeit zu schreiben, mit blöden Kollegen im Büro umzugehen, ein Haus zu bauen..wahrscheinlich geht’s euch so wie mir. Baby Steps, ein Schritt nach dem anderen, eine Entscheidung nach der anderen. Anders geht’s ja auch gar nicht. Ich verneige mich vor euch allen, die noch viel größere Dinge wuppen müssen als ich. Ihr seid meine Heros!</p>

Mir ist es wichtig, dass ich immer ehrlich zu euch bin und ihr müsst wissen, dass ich es nicht schaffe, immer und zu jeder Lebenssituation gesund zu essen. Bei der fünftägigen Wohnungsstreichaktion von Jannis und mir wurde nicht nur einmal der Pizza-Service bestellt. Auch wurde fertiger Salat beim Supermarkt gekauft (gut, bei Denn’s aber der war auch schon n’ Tag alt), Nicht-vegane Schokolade verputzt, Bier getrunken Chips gegessen. Auch, Laufen, Yoga oder Meditation kamen zu kurz, weil ich einfach keine Kraft mehr hatte für andere Dinge als Packen, Putzen und Streichen. Ich will hier kein Mitleid, sondern euch einfach nur sagen, dass es o.k. ist, wenn man nicht immer 100% gesund isst. Es werden auch wieder andere Zeiten kommen in denen mehr Zeit für gesundes Essen, Sport und Bewegung ist. Manchmal geht’s eben nicht anders und das ist in Ordnung. Damit kann der Körper umgehen. Eine Zeit lang jedenfalls.</p>

Der wird die nächsten Tage zwischen Kisten, Kommoden und neuen Küchenschranken gefuttert. Mit ganz viel frischem Gemüse, das ich am Samstag noch auf dem Markt gekauft habe. Es gibt nur wenige Fotos dieses Gerichtes, weil alles andere schon eingepackt ist. Ich hoffe, ihr vergebt mir. Falls bei euch also auch ein Umzug oder ein paar stressige Wochen anstehen, dann erinnert euch an mich und an diesen leckeren Hummus. Am Ende wird immer alles gut. Sonst ist es ja nicht das Ende.</p>

<li id="instruction-step-1">Die Paprika halbieren, die Kerne entfernen und die Hälften mit der offenen Seite nach unten auf ein mit Backpapier ausgelegtes Backblech legen. Die Knoblauchzehen dazulegen und alles mit etwas Olivenöl beträufeln. Beides bei 200°C circa 25 Minuten rösten, bis sich die Haut von der Paprika löst. Wer mag, kann die Haut von der Paprika dann abziehen, dann wird der Hummus etwas feiner. Ich lasse meine aber immer dran.</li>
<li id="instruction-step-2">Das Tahin mit dem Olivenöl zuerst in euren Mixer oder Food Processor geben und circa eine Minute lang verrühren. So wird der Hummus etwas fluffiger. Dieser Salat ist mein absoluter Favorit wenn’s Mittags mal wieder schnell gehen muss. Bei soviel frischem Gemüse und Proteinen in Form von Hummus und Tahin könnt ihr dem 14 Uhr Mittagstief Auf Wiedersehen sagen, denn dieser Regenbogensalat steckt voller Vitamine und Nährstoffe, die euch fit halten. Dadurch habt ihr den ganzen Nachmittag lang Energie und fühlt euch super.<br />
Paprika, Cherrytomaten und Karotten zählen aufgrund ihrer milden Süße zu meinen Lieblingsgemüsesorten, weshalb ich sie immer im Kühlschrank habe. Den cremigen Counterpart liefern in diesem Fall die Avocado und der unheimlich leckere selbstgemacht Hummus. Der ist ruck zuck zubereitet und hält sich einige Tage im Kühlschrank. Die Proteine im Hummus machen satt und die gesunden Fette in der Avocado sorgen dafür, dass unser Körper die Nährstoffe im Gemüse besser aufnehmen kann. <span id="more-1798"></span>Getoppt wird das ganze nur noch vom Tahin-Minze-Dressing, einer himmlischen Kombination aus cremigem Tahin, frischer Minze, Zitronensaft und Apfelessig. Tahin ist eine Sesampaste, die traditionell in Hummus verwendet wird, aber auch in Dressings oder Soßen verwendet wird. Tahin überzeugt vor allem durch seinen hohen Proteingehalt und die Vielzahl an Mineralien wie Magnesium, Kalium und Eisen.</p>
<p>Zusammen ergibt das ganze einen gesunden Regenbogen, der euch garantiert den ganzen Tag lang stärkt!</p>
