<p>Paella ist eines meiner liebsten Sommergerichte. Es erinnert mich wie sicherlich viele von euch an schöne Sommerurlaube in Spanien oder an gesellige Sommerabende mit der Familie und Freunden. In die Spanische Paella gehören traditionell Meeresfrüchte und in manche sogar Fleisch. Da sowohl Meeresfrüchte als auch Fleisch die Paella sehr teuer machen, ist diese fisch- und fleischlose vegetarische Variante nicht nur gesund sondern auch noch gut für den Geldbeutel. Selbst den teuren Safran habe ich durch das günstigere Kurkuma ersetzt und trotzdem den typischen Paella-Geschmack erhalten. Kurkuma ist sogar ein heilendes Gewürz und macht diese vegetarische Paella nicht nur herrlich gelb, sondern auch antibakteriell. <span id="more-1150"></span></p>

<p>Kurkuma wird aus der Kurkuma-Wurzel gewonnen, die so ähnlich aussieht wie Ingwer, jedoch ein leuchtend orangefarbenes Fleisch hat und die es hierzulande vor allem in Bio-Läden zu kaufen gibt. Das ayurvedische Gewürz ist vor allem in der Chinesischen und Indischen Medizin wegen seiner antibakteriellen Wirkung bekannt und beliebt. In beiden Ländern wird die heilende Kurkuma-Wurzel unter anderem bei weiblichen Menstruationsproblemen, Zahnschmerzen oder Koliken eingesetzt.</p>

Für diese Paella ist das Kurkuma-Pulver allerdings besser geeignet als die Wurzel. Es kostet auch nicht mehr als andere Gewürze und ist generell ein Gewürz das in eine gesunde Küche gehört. Falls ihr (wie ich) Freunde oder Familie habt, die Kurkuma aus irgendeinem Grund nicht mögen, könnt ihr natürlich auch Safran benutzen. Ich habe einfach beide Gewürze benutzt und mir und meinem Freund hat es super geschmeckt. Da ich statt Basmatireis Naturreis benutzt habe, hat die Sättigung auch schneller eingesetzt und länger angehalten, als bei weißem Reis. Die Paella ist wirklich sehr als Sommergericht geeignet, da sie satt macht aber nicht zu schwer im Magen liegt. Auch mit Freunden lässt sie sich prima teilen, da sie wenn nötig auch warm gehalten werden kann.</p>

<li id="instruction-step-1">Zuerst die Zwiebel und Knoblauchzehen hacken. Das Gemüse waschen, evtl. putzen und in Würfel schneiden. Die Enden der grünen Bohnen entfernen und einmal halbieren.</li>

<li id="instruction-step-3">Das Olivenöl auf mittlerer Hitze in einer großen Pfanne erwärmen und den Knoblauch und die Zwiebeln darin ca. ein bis zwei Minuten anschwitzen. Die Paprika, Tomaten, Zucchini und Champignons hinzufügen und weitere 5 bis 10 Minuten anbraten.</li>
<li id="instruction-step-4">Nun die gefrorenen Erbsen und grünen Bohnen hinzugeben und weitere 5 Minuten anbraten.</li>
<li id="instruction-step-5">Den Reis zum Gemüse geben und anbraten, bis er fast durchsichtig wird. Das Gemüse mit der Brühe ablöschen, die Gewürze hinzufügen und das ganze ca. 40 &#8211; 50 Minuten auf mittlerer Hitze köcheln lassen. Falls der Reis zu trocken wird, bzw. die Gemüsebrühe verdampft ist, mehr Gemüsebrühe hinzugeben.</li>
<li id="instruction-step-6">Die Paella vom Herd nehmen und mit dem Zitronensaft übergießen. Die Pfanne mit einem Küchentuch bedeck ca. 10 Minuten stehen lassen, bevor die Paella serviert werden kann.</li>
