<p>Kennt ihr Peanut Butter &amp; Jelly Sandwhiches? Diese schön-klebrigen U.S. amerikanischen Snacks auf ungetoastetem Weißbrot ohne Kanten? Im Grunde ist es nichts anderes als weißes Toastbrot mit Erdnussbutter und Gelee. Klingt scheußlich, ist aber echt lecker, wenn man das Weißbrot durch Vollkornbrot und das Gelee durch frische, süße Früchte ersetzt. Da ich die letzten zwei Wochen auf einer Hochzeit in den USA war, erinnerte ich mich wieder daran, wie gerne ich doch PB&amp;J Sandwhiches verputzt habe, in meiner Zeit in der High School und im College. Deswegen gibt es heute ein einfaches aber trotzdem leckeres amerikanisch-inspiriertes Peanut Butter &amp; Jelly Overnight Oats-Rezept.<span id="more-5489"></span>Nussbutter auf Vollkornbrot gehört zu meinen Lieblingssnacks &#8211; am besten schmeckt es, wenn man es mit Banane, frischen Erdbeeren oder Himbeeren zusammen isst. Ist für viele unvorstellbar, aber wenn man erst einmal drauf gekommen ist, dann will man nie wieder Marmelade essen. Erdnussbutter und etwas Süßes passen nämlich geschmacklich super zusammen. Und weil wir alle viel zu viel Brot essen, habe ich mein zweitliebstes Frühstück einfach mit meiner Liebe zu &#8222;Peanut Butter &amp; Fruits&#8220; verbunden. Herausgekommen sind meine allerliebsten Peanut Butter &amp; Jelly Overnight Oats.</p>
<p>So simpel, so schnell zubereitet und so nahhaft. Ihr braucht genau eine Minute für die Zubereitung. Inklusive Zutaten zusammensuchen und wegstellen kommt man dann denke ich so auf fünf Minuten maximal. Und schon habt ihr euch ein leckeres und gesundes Frühstück gezaubert. Man gibt für diese Overnight Oats nämlich einfach alle Zutaten in eine Schüssel, stellt diese in den Kühlschrank und geht ins Bett. Wenn man aufwacht, hat man ein leckeres Frühstück, das nicht nur gut verdaulich ist, sondern einem auch noch Energie für den ganzen Tag gibt. Ebenfalls enthält es durch das Erdnussmus wichtige pflanzliche Proteine, die euer sonstiges Frühstück sicherlich nicht gehabt hätte.</p>

Es hat sicher geholfen, dass meine amerikanische Zieh-Familie (die Familie meiner College-Mitbewohnerin) bekennende Demokraten-Familie ist. Für mich war es einfach ein wunderbares Erlebnis, Teil einer amerikanischen Hochzeit zu sein, inklusive Bridal Party und allem Drum Herum. Wir verbrachten zwei wunderbare Tage im schönen Asheville, einer Hippi-Stadt in den Bergen North Carolinas. Überall gab es Independent Stores, Coconut Lattes und Veggie-Burger. Ein Paradies für mich! Wenn ihr also mal im Süden der USA rumreisen solltet, dann schreibt euch Asheville dick und fett auf eure Liste.</p>
<p>Das Rezept für diese amerikanisch-angehauchten Overnight Oats ist wirklich so so simpel, dass ich auch nicht mehr viel dazu zu sagen habe als: probiert es aus. Ich bin mir ganz sicher, dass es vielen von euch richtig gut schmecken wird. Solltet ihr eine Erdnussallergie haben, dann tauscht das Erdnussmus einfach gegen Mandelmus oder auch Sonnenblumenmus aus. Ihr könnt natürlich auch mit den Zutaten spielen &#8211; wie jedes meiner Rezepte ist dies nur ein grober Guide, den ihr befolgen könnt, aber nicht müsst.</p>

<p>Jetzt wo die Temperaturen endlich sommerlich sind und wir uns am Wochenende leider bereits den ersten Sonnenbrand zugezogen haben, gibt es morgens nichts besserers als eine gekühlte Schüssel Overnight Oats. Das Rezept für Overnight Oats war mit das erste, das ich auf HLH veröffentlicht habe, denn es war mein Go-to-Frühstück während meiner Ernährungsumstellung in den USA. Heute habe ich das Verhältnis von Haferflocken etwas angepasst, bin zu Hafermilch gewechselt und toppe meine Oats mit so viel nährstoffreichen Lebensmitteln wie möglich. Wenn ihr tagsüber Schwierigkeiten habt, gesund zu essen, dann ist Frühstück die Gelegenheit den Körper mit wertvollen Nährstoffen zu versorgen.</p>
<p>Übrigens basieren Overnight Oats auf dem traditionellen Birchermüsli-Rezept von Bircher Brenner. Der Schweizer Arzt entwickelte das Birchermüsli und gilt ebenfalls als einer der Gründer des Begriffes der Vollwertkost.</p>

Ich erzählte ihr von Overnight Oats und die Reaktion war &#8211; wie so oft &#8211; Ungläubigkeit. &#8222;Das ist doch viel zu trocken&#8220; oder &#8222;das schmeckt doch nie&#8220;. Oder &#8222;und dein Freund isst das auch?&#8220;.</p>
<p>Dabei sind Overnight Oats doch gar nichts anderes als über Nacht eingeweichtes Müsli. Der Vater meines Freundes hat ihm früher sogar sein Müsli wirklich immer eingeweicht und in den Kühlschrank gestellt, bevor er zur Arbeit gegangen ist. Also kannte er Overnights Oats sogar vor mir.</p>

<p>Haferflocken enthalten viele essentiellen Nährstoffe wie Biotin, Magnesium, Eisen, Silicium oder auch B-Vitamine. Biotin ist besonders wichtig für Haut und Nägel ist, B-Vitamine wie B1 sorgen für ein gesundes Nervensystem, Vitamin B-6 wird für die Hämoglobin-Bildung gebraucht (für ein gesundes Blut) und es unterstützt die Serotoninproduktion. Serotonin ist ein Glückshorman, weshalb Hafer im wahrsten Sinne glücklich machen kann.</p>
<p>Durch das Einweichen der Haferflocken werden diese bekömmlicher und die Phytinsäure wird aufgebrochen. Phytinsäure ist in fast allen Getreidesorten und Hülsenfrüchten in der äußeren Schicht enthalten. Sie verhindert, dass ein Samen keimt, bevor er sich in der idealen Umgebung befindet. Während des Keimens dient Phytinsäure dann als Energiequelle für den Keimling. Leider tut uns Menschen Phytinsäure gar nicht gut, denn sie verhindert zu einem Großteil die Aufnahme von Zink, Magnesium, Eisen und Calcium, sowie verschiedene Enzym-Prozesse im Körper.</p>
<p>Die gute Nachricht: das Einweichen von Getreide, Bohnen und Hülsenfrüchten kann die Phytinsäure größtenteils entfernen. Zwar enthält Hafer im Gegensatz zu Bohnen oder Weizen (das volle Korn) relativ wenig Phytinsäure, doch durch das Einweichen und die Zugabe von etwas Säure, wie z.B. Zitronensaft, zerstört. So kann unser Körper alle Nährstoffe aus dem vollen Haferkorn und seinen Toppings aufnehmen.</p>

<p>Ich mixe meine Overnight Oats in einem Verhältnis von 1:1,5. Ein Cup Haferflocken und 1, 5 Cups Hafermilch. In Gramm sind das 100g Haferflocken mit 375ml Hafermilch. Solltet ihr aber merken, dass es zu wenig ist, dann gießt es auf, bis die Haferflocken gerade vollständig mit Hafermilch bedeckt sind. Dazu kommen 2 Esslöffel Chia-Samen oder frisch gemahlene Leinsamen, eine Prise Vanillepuder sowie Zimt. Ganz wichtig ist nun, dass ihr einen <strong>Spritzer Zitronensaft</strong> dazugebt, damit die Phytinsäure optimal aufgebrochen werden kann. Dann noch 2 EL Kürbiskerne oder Sonnenblumenkerne dazu und ab in den Kühlschrank.</p>
<p>Falls ihr eine Glutenunverträglichkeit oder Zöliakie habt, dann kauft zertifierte glutenfreie Hafermilch, Mandelmilch oder &#8211; besser noch- macht eure glutenfreie <a href="https://heavenlynnhealthy.de/selbstgemachte-hafermilch/" target="_blank" rel="false noopener noreferrer">Hafermilch </a>selbst. Bei Mandelmilch müsst ihr aber dann einen Teelöffel Honig oder Reissirup dazugeben, weil es sonst nicht süßlich genug schmeckt.</p>

Wie gesagt, das Frühstück ist bei den meisten von uns die gesündeste Mahlzeit, also gebt eurem Körper all das was er gerne hätte, aber so selten bekommt: Nährstoffe, Nährstoffe Nährstoffe.</p>

Die meisten Nährstoffe in diesen Overnight Oats kommen aus den Chia Samen. Ich werde diesen kleinen Alleskönnern demnächst noch einen ganzen Artikel widmen, denn es sind echte kleine Gesundheits-Wunder.</p>
