<p>Als ich die Kekse am letzten verregneten Wochenende gebacken habe, lief dabei natürlich meine liebste Herbst-Playlist und vielleicht auch die ein oder andere Folge Gilmore Girls. Besser kann der Herbst kaum werden. </p>

<li id="instruction-step-1">Den Backofen auf 180 °C Ober- und Unterhitze (160 °C Umluft) vorheizen. Das Mehl mit dem Kokosblütenzucker, Backpulver und Pumpkin Spice in einer Schüssel vermengen.</li>

<p>Da mein Gefrierfach quasi mit <a href="https://heavenlynnhealthy.de/selbstgemachtes-kuerbispueree/">Kürbispüree</a> überquillt, gibt es bei uns zur Zeit alles mögliche mit Kürbis. Natürlich meine <a href="https://heavenlynnhealthy.de/ein-mal-etwas-gutes-cremige-kuerbissauce-mit-salbei-und-cashewkernen/">Lieblings-Kürbissauce</a>, <a href="https://heavenlynnhealthy.de/gesunder-pumpkin-spice-latte/">Pumpkin Spice Latte</a> oder auch gerne auch meine <a href="https://heavenlynnhealthy.de/kuerbis-brownies/">Kürbis-Brownies</a>. Egal, wofür ihr es verwenden wollt, Kürbispüree selber zu machen und einzufrieren lohnt sich immer. Heute gibt es wieder eine andere Verwertung von meinem Lieblingspüree, und zwar in diesen gesunden Kürbis-Muffins. <span id="more-4550"></span></p>

<p>Ich habe schon lange an diesem Rezept getüftelt und es war gar nicht so leicht, die richtige Konsistenz hinzubekommen. Erst waren die Muffins viel zu weich, dann waren sie leider viel zu hart. Nun aber sollte ich die goldene Mitte getroffen haben. Ich mag an diesen Muffins vor allem ihren leicht nussigen, winterlichen Geschmack und ihre unterschwellige Süße. Ich bin ja nicht so der riesengroße Fan von extrem Süßem, deswegen sind diese Muffins eher leicht süßlich. Natürlich könnt ihr sie nach eurem Geschmack anpassen und etwas mehr Ahornsirup dazugeben.</p>

<p>Den ultimativen Kick bekommen diese gesunden Kürbis-Muffins aber durch den typischen Pumpkin Spice Mix, einer Mischung aus Zimt, Muskatnuss, Ingwer, Nelken und Piment. In Deutschland steht diese Mischung eigentlich schon für Weihnachten, deswegen könnte man diese Muffins bereits als Weihnachtsmuffins verkaufen.</p>

<p>Kommen wir nun zu den tollen Zutaten in diesen Muffins. Wie immer enthält auch dieses Rezept nur natürliche, gesunde Zutaten, die euch gut fühlen lassen werden. Neben meinem Lieblings-Mehlmix aus Buchweizenmehl und gemahlenen Haferflocken enthalten die Muffins gesunde Süße durch eine reife Banane und Ahornsiup, Saftigkeit durch das nährstoffreiche Kürbispüree, sowie gesunde Fette durch das Kokosöl. Ein Chia-Ei ersetzt das echte Ei und Kürbiskerne und Haferflocken runden das ganze oben ab.</p>

<li id="instruction-step-1">Den Backofen auf 170°C vorheizen. Eine Muffinform mit Kokosöl einfetten, wenn ihr keine Silikonform benutzt.</li>
<li id="instruction-step-2">Das Kokosöl in einer kleinen Pfanne schmelzen. Die Chiasamen in einer kleinen Schüssel mit dem Wasser vermengen und ca. 10 Minuten zum Andicken zur Seite stellen. Die Haferflocken in einem Mixer oder Food Processor zu Mehl mahlen und zur Seite stellen.</li>
<li id="instruction-step-3">In einer Rührschüssel oder Food Processor das Kokosöl, Ahornsirup und die Banane mit einem Handrührgerät oder einem Schneebesen vermengen. Im Food Processor alles ca. 20 Sekunden pulsieren.</li>
<li id="instruction-step-4">Nun das Kürbispüree, die Mandelmilch, Chia-Mix, Backpulver, Gewürze, Salz und Vanille dazugeben und gut verrühren.</li>
<li id="instruction-step-5">Jetzt das Buchweizenmehl sowie gemahlenen Haferflocken unterrühren. Wenn ihr Chocolate Chips verwendet, dann gebt diese jetzt dazu. Sollte der Teig zu zäh sein, dann gebt noch ein paar Esslöffel Mandelmilch dazu.</li>
<li id="instruction-step-6">Jeweils 2 &#8211; 3 große Esslöffel Teig in jede Muffinsform geben. Ich mag meine Muffins größer, deswegen komme ich meistens nur auf 9 &#8211; 10 Muffins. Den Teig mit Haferflocken und Kürbiskernen dekorieren.</li>
<li id="instruction-step-7">Die Muffins für 25 &#8211; 30 Minuten backen, bis ihr eine Gabel sauber herausziehen könnt. Bitte komplett auskühlen lassen bevor ihr sie aus der Form nehmt.</li>
<li id="instruction-step-8">In einem luftdichten Container halten sich die Muffins ca. 4 Tage lang. Sie werden allerdings mit jedem Tag härter.</li>

Der Oktober steht für mich für vor allem für strahlende Bäume, Sonnenschein und lange Läufe oder Spaziergänge mit langen Klamotten, die man aber in der Sonne getrost noch ablegen kann. <p>Leider habe ich neulich gelesen wie schlecht die Starbucks Variante allerdings ist. Was sich in dem Sirup alles befindet, möchte man lieber gar nicht wissen. Deswegen habe ich meinen eigene Pumpkin Spice Latte Kreation entworfen und das Ergebnis kann sich mehr als sehen lassen. Sie ist komplett frei von ekeligen Zusatzstoffen, raffiniertem Zucker und alles, was man eben nicht in seinem Kaffee haben möchte. Dafür steckt sie voller Vitamin A, denn davon hat der Kürbis nämlich reichlich. Hier kommt es also, Lynns Gesunder Pumpkin Spice Latte.</p>

<p>Für die Pumpkin-Spice Gewürzmischung<br />
&#8211; 1 EL Zimt<br />
&#8211; 1 TL Muskatnusspulver<br />
&#8211; 1 TL Ingwerpulver<br />
&#8211; 1/2 TL Nelkenpulver</p>
<p>Für den Latte<br />
&#8211; 1 EL <a href="https://heavenlynnhealthy.de/selbstgemachtes-kuerbispueree/">Kürbispüree</a><br />
&#8211; 1 TL Agavendicksaft<br />
&#8211; 1 Espresso<br />
&#8211; 1 Tasse Mandelmilch (200 &#8211; 250ml)</p>

&#8211; Kokos-Schlagsahne</p>

<li>Den Agavendicksaft mit einem Teelöffel der Gewürzmischung vermengen bis sich die Gewürze halbwegs aufgelöst haben.</li>
<li>Die Mandelmilch aufschäumen und mit dem Espresso vermengen. Einen Esslöffel <a href="https://heavenlynnhealthy.de/selbstgemachtes-kuerbispueree/">selbstgemachtes Kürbispüree</a> sowie den Pumpkin-Spice-Agavendicksaft-Sirup dazugeben und gut vermengen. Wer mag toppt das ganze noch mit etwas Kokos-Schlagsahne und etwas Zimt &#8222;obendruff&#8220;.</li>
</ol>
<p>Da der Sirup etwas zäh ist, müsst ihr den Latte wahrscheinlich während des Trinkens noch ein paar mal umrühren, denn wie auf den Bildern zu sehen ist, setzt sich der ganze Kürbis gerne unten fest.</p>
