Natürlich ist es nicht nur ein Bananenbrot, sondern ich dachte mir, ich könnte doch auch zwei meiner Lieblingsnaschereien verbinden: Bananenbrot und Carrot Cake. Dieses gesunde Bananen-Karotten-Brot ist deswegen nicht nur lecker, sondern enthält auch noch eine gute Portion Karotten, die das Brot erst so richtig schön saftig machen. Nebenbei kommen in das süße Brot nur gute Zutaten, die den Körper mit wichtigen Vitaminen und Mineralstoffen versorgen.</p>

Das Kokosöl habe ich beispielsweise kurz erwärmt, sodass es eine fast flüssige Konsistenz hatte. Anscheinend ist dies das Geheimnis eines guten, gesunden Bananenbrotes, denn mein Bananenbrot hat noch nie so gut geschmeckt wie gestern. Da ich so begeistert war, musste das Rezept einfach heute auf den Blog und ich hoffe sehr, dass der ein oder andere es auch gleich ausprobieren wird.</p>

<p>Neben potassiumreichen Bananen enthält dieses Bananenbrot Karotten, Chiasamen und Dinkelvollkornmehl und weder Industriezucker, Eier oder Weizenmehl. Deswegen kann man sich gerne auch mal zwei Scheiben dieses &#8222;Kuchens&#8220; gönnen und ihn sogar reuelos zum Frühstück essen. Am besten schmeckt er mir mit einer ordentlichen Schicht Mandelbutter und einer Prise Zimt. Wie esst ihr euer Bananenbrot am liebsten?</p>

<li id="instruction-step-1">Den Backofen auf 170 °C Ober- und Unterhitze vorheizen. Die Chiasamen mit dem Wasser vermengen und ca. 10 Minuten andicken lassen, ggf. ein, zweimal umrühren. Die Karotte fein raspeln oder in einem Food Processor zerkleinern. Die Nüsse grob hacken. Die Bananen schälen und in einer Schüssel mit einer Gabel zerdrücken, wenn ihr keinen Food Processor besitzt. Das Kokosöl in einer Pfanne auf niedriger Stufe leicht erhitzen, bis es weich und ein wenig flüssig wird.</li>
<li id="instruction-step-2" class="instruction">Kokosöl und Ahornsirup in eine Rührschüssel geben und vermengen. Den Chiasamen-Mix und die Bananen dazugeben und gut verrühren. Nach und nach das Mehl, das Backpulver und die Gewürze dazugeben. Anschließend die Milch nach und nach zum Teig geben und nochmals gut verrühren.</li>
<li id="instruction-step-3" class="instruction">Schließlich die Karotten und 3/4 der Walnüsse mit einem Spatel unterheben und vorsichtig verrühren. Der Teig sollte eine klebrige Masse sein, die eher an Brotteig als an Kuchenteig erinnert.</li>
<li id="instruction-step-4" class="instruction">Den Teig in eine mit Backpapier ausgelegte Backform füllen. Wenn ihr es so dekorieren wollt wie auf meinem Bild, dann streut die restlichen Walnüsse über den Teig und schneidet eine Banane der Länge nach durch und drückt die Hälften leicht in den Teig. Den Kuchen bei 170 °C ca. 50 &#8211; 55 Minuten backen. Die genaue Backzeit hängt vom jeweiligen Ofen ab.</li>
<li id="instruction-step-5" class="instruction">Nach ca. 30 Minuten sollte das Brot mit Alufolie abgedeckt werden, damit die Dekoration nicht anbrennt.</li>
<li id="instruction-step-6" class="instruction">Das Bananenbrot mindestens 15 Minuten abkühlen lassen, bevor ihr es genießen könnt.</li>
