Dieses Süßkartoffel und Blumenkohl Thai Curry schmeckt so intensiv und lecker, dass ich es jeden Tag essen könnte. Mein &#8222;armer&#8220; Freund musste dies leider auch die letzten paar Tage tun, weil ich einfach nicht genug von der Mischung dieser herrlichen Gewürze bekommen konnte. Jeder Bissen ist ein Genuss für die Sinne: die Süßkartoffeln, Möhren und der Blumenkohl harmonieren perfekt mit den Gewürzen und die Kokosmilch verleiht dem Gericht die himmlisch cremige Konsistenz. Ich mag es persönlich sogar noch cremiger und gebe gerne noch ein paar Esslöffel Erdnuss- oder selbst gemachte Mandelbutter hinzu &#8211; was den Geschmack des Curries noch einmal intensiviert.</p>

<p>Das tolle an Curries ist, dass man bei den Gemüsesorten sehr flexibel ist. Man kann z.B. einfach das Gemüse aufbrauchen, das man noch im Kühlschrank hat. Egal ob Auberginen, Zucchini, Kürbis, Kartoffeln oder Paprika, der Phantasie sind bei Curries keine Grenzen gesetzt. Wenn ihr also nicht alle Gemüsesorten in meiner Liste da habt, dann werdet einfach kreativ oder nutzt, was ihr noch im Haus habt. So machen Curries richtig Spaß, weil man immer wieder neue Geschmacksrichtungen ausprobieren kann. Beim Kochen kann man bei Curries auch wirklich nichts falsch machen. Nur das Gemüse schnibbeln, in den Topf geben und zwischen 40 und 60 Minuten köcheln lassen. Curries sind also das perfekte Gericht, wenn ihr gerade erst mit dem Kochen anfangt. Auch für größere Gruppen eignen sich Curries perfekt. Wenn ihr als das nächste Mal Freunde zu Besuch habt, dann überrascht sie doch einmal mit einem leckeren Thai Curry wie diesem hier. Eure Freunde werden begeistert sein und nie im Leben glauben, dass dieses Gericht wirklich gesund ist.</p>

<li id="instruction-step-1">Die Süßkartoffel und die Möhren schälen und in mundgerechte Stücke schneiden. Das Grün vom Blumenkohl trennen und den Blumenkohl-Kopf waschen und ebenfalls zerkleinern. Die Paprika halbieren, die Kerne entfernen und zerschneiden. Den Ingwer ungeschält kleinhacken.</li>
<li id="instruction-step-2">Das Olivenöl in einem großen Kochtopf, Pfanne oder Wok auf mittlerer bis hoher Stufe erhitzen. Den Ingwer und die Curry-Paste dazugeben und ca. eine Minute scharf anbraten.</li>
<li id="instruction-step-3">Nun die Möhren, Paprika und Blumenkohl dazugeben und ca. 10 Minuten auf mittlerer Hitze garen. Nun die Süßkartoffeln in die Pfanne geben und mit der Kokosmilch ablöschen.</li>
<li id="instruction-step-4">Die Gewürze und Tamari oder Sojasoße hinzugeben. Sofern ein Deckel vorhanden ist, nun den Deckel auf die Pfanne oder den Topf geben und ca. 40 Minuten köcheln lassen.</li>
