In diesem Jahr hat sich mein Leben komplett verändert und der Blog ist quasi zu meinem kleinen Baby geworden, das jetzt auch schon ein Jahr alt ist. Ich habe zwar keine Kinder, aber muss wirklich sagen, dass das erste Jahr wie im Fluge vergangen ist. Ich habe es tatsächlich geschafft jede Woche zwei Rezepte zu posten, sodass dieses Rezept bereits das 124. Rezept auf dem Blog ist. Um dies und den 1. Deswegen war ich auch so begeistert, dass mir die französische Traditionsmarke Le Creuset* ihre neuen Kochkellen für ein Gewinnspiel zur Verfügung gestellt hat. Seit letztem Weihnachten bin ich nämlich selber stolze Besitzerin eines Creuset Bräters, in dem ich bereits viele Eintöpfe und Curies zubereitet habe und den ihr deswegen schon oft auf dem Blog gesehen haben müsstet. Er ist mein erster wirklich wertvoller Topf, von dem ich hoffentlich noch sehr lange etwas haben werde.</p>

<p>Den Kurkuma-Vanille-Wohlfühl-Eintopf habe ich neulich einfach aus der Laune heraus nach einer schön entspannenden Yoga-Session gemacht. Deswegen auch der Name &#8222;Wohlfühl-Eintopf&#8220;, weil er so viele wärmende und gesunde Gewürze enthält, die dem Körper einfach gut tun und die himmlisch lecker schmecken. Ihr braucht keine teuern Geräte oder Zutaten um den Eintopf zuzubereiten, ein ganz normaler Kochtopf tut es natürlich auch. Vielleicht seid ihr ja bald stolzer Besitzer einer der tollen Kochkellen, womit ihr euch quasi ein Stück französische Küche ins Haus holt &#8211; vielleicht ja der Anfang einer Le Creuset*-Liebe?</p>

<li id="instruction-step-1">Als erstes das Gemüse vorbereiten: die Zwiebel schälen und klein hacken. Den Knoblauch durch die Knoblauchpresse geben. Den Ingwer ebenfalls klein hacken. Die Süßkartoffeln schälen und in mundgerechte Stücke schneiden. Die Paprika halbieren, die Kerne entfernen und ebenfalls in mundgerechte Stücke schneiden. Die Zucchini einmal halbieren und in Scheiben schneiden.</li>
<li id="instruction-step-2">Alle Gewürze in eine kleine Schale geben und vermengen.</li>
<li id="instruction-step-3">In einem Bräter oder einem großen Kochtopf das Kokosöl oder Olivenöl erhitzen. Die Zwiebeln, Knoblauch und Ingwer dazugeben und ca. 2 Minuten auf mittlerer Hitze anbraten. Die Gewürze dazugeben und eine weitere Minute anbraten, bis sich ihr Aroma komplett entfaltet hat.</li>
<li id="instruction-step-4">Nun das Gemüse dazugeben und ca. 3 &#8211; 5 Minuten anbraten. Dann das Wasser, die Gemüsebrühe und Tomaten dazugeben und auf hoher Hitze aufkochen. Die Hitze reduzieren, die Linsen dazugeben und ca. 30 Minuten köcheln lassen, bis die Kartoffeln schön weich werden.</li>
<li id="instruction-step-5">In der Zwischenzeit den Reis nach Packungsanleitung kochen.</li>
<li id="instruction-step-6">Kurz vorm Servieren den Spinat und den Saft der Zitrone unterrühren und eventuell mit Salz und Gewürzen abschmecken. Die Kräuter hacken und den Eintopf zusammen mit den Kräutern und dem Naturreis servieren.</li>

<p>Vorletzte Woche habe ich eine Email von einer Leserin bekommen, die mir den Tipp gab doch mal Avocado und Mandelmilch zu einem Pudding zu vermischen. Ich war natürlich sofort begeistert, nicht nur wegen der Idee, sondern auch weil sie von einer von euch kam. Ich bin immer wieder überrascht, dass Menschen tatsächlich meinen Blog lesen und meine Rezepte nachkochen oder backen. Danke, Nadine, für diese tolle Inspiration. Leider schmeckt Avocado mit Mandelmilch alleine ziemlich fad und schreit förmlich danach, verfeinert zu werden. Deswegen habe ich noch einen Klacks Honig, Vanille, Chia-Samen und grünes Superfood-Pulver dazugeben und heraus kam dieser leckere Avocado-Vanillepudding. <span id="more-3311"></span></p>

<p>Jede einzelne Zutat in diesem Rezept ist gesund, was aber nicht heißt, dass dieser Avocado-Vanillepudding nicht schmeckt. Avocados liefern gesunde Fette, Honig wirkt antibakteriell, Chia-Samen kommen mit einer super langen Liste an Mineralstoffen und Vitaminen, Mandelmilch enthält eine gute Portion Vitamin E, was unsere Haut, Nägel und Haare zum Strahlen bringt und Vanille verleiht dem Pudding eben das gewisse Etwas. Natürlich schmeckt der Pudding nicht wie normaler Vanillepudding, aber das soll er ja auch gar nicht. Es ist eben die etwas andere Nachtisch-Creme. Geschmacklich ist sie ganz schwer zu beschreiben. Man schmeckt die Avocado noch heraus, aber sonst dominiert die Süße des Honigs und die Kraft der Vanilleschote. Seid mutig und probiert es heute einmal aus! Ich bin gespannt, was ihr zu berichten habt!</p>

<p>Ich weiß, dass es jetzt fast schon zu spät ist um Plätzchen zu backen, aber vielleicht haben eure Ferien oder Urlaube an diesem Wochenende begonnen und ihr habt es bisher noch nicht geschafft die Weihnachtsbäckerei nach Hause zu holen. Vielleicht habt ihr aber auch bereist alle euren <a href="https://heavenlynnhealthy.de/gesunde-zimtsterne/">gesunden Zimtsterne</a> und <a href="https://heavenlynnhealthy.de/gesunde-spekulatius/">Spekulatius </a>aufgegessen und braucht noch Nachschub. <p>Diese Plätzchen sind letztes Wochenende in Nürnberg entstanden, als ich mit meiner besten Freundin ein super schönes Mädelswochenende verbracht habe. Da wir seit fast 6 Jahren in verschiedenen Städten, Ländenr oder Kontinten leben, sollte man meinen, dass es nicht immer einfach ist, diese Freundschaft aufrecht zu erhalten. Allerdings ist genau das Gegenteil der Fall, denn komischerweise hat uns die Distanz noch viel enger zusammen gebracht. Natürlich wäre es ein Traum, wenn wir mal wieder in der gleichen Stadt leben würden, aber auch so ist es als wären wir nie getrennt gewesen, wenn wir uns sehen. Wir teilen die gleichen Interessen, hören die gleiche Musik, lieben Sport und gutes Essen und browsen auf den gleichen Blogs. Allerdings sind wir doch zwei sehr verschiedene Menschen, aber genau das ergänzt uns so gut. Es ist so wichtig, Freundschaften aufrecht zu halten und um sie zu kämpfen, denn Freundschaften sind für die Gesundheit genauso wichtig wie gutes Essen oder Bewegung.</p>

<p>Dieses Rezept ist deshalb ein Freundschafts-Rezept, denn es ist von meiner besten Freundin und mir gemeinsam entwickelt worden. Der Mürbeteig ist derselbe wie in meinen anderen gesunden Plätzchen: Kokosblütenzucker, Kokosöl und eine Mischung aus Buchweizenmehl und gemahlenen Haferflocken. Hinzu kommt das Mark einer ganzen Vanilleschote, sowie ein Chia-Ei und gemahlene Kokosraspeln zum Bestreuen. Fertig sind die leckeresten gesunden Vanillekipferl, die ihr finden könnt.</p>

<p>Schade, dass man nur im Advent Appetit auf Plätzchen und Co. hat, denn eigentlich schmecken die ja auch das ganze Jahr über. Vielleicht könnte man sie auch mit etwas Zitronesaft und Zitronenschale an den Sommer anpassen, denn der Basis-Teig schmeckt ja eigentlich immer.</p>
<p>Falls ihr dieses Jahr also noch vor habt, Vanillekipferl zu backen, dann probiert doch mal die gesündere Variante aus. Ihr werdet es nicht bereuen!</p>

<li id="instruction-step-5">Vanillemark, Chia-Ei, gemahlene Mandeln und Haferflocken, Buchweizenmehl, Salz, zu dem Teig geben und gut vermengen. Aus dem Teig zwei fingerdicke Rollen formen, in Frischhaltefolie einwickeln und für mindestens 1 Stunde in den Kühlschrank stellen.</li>
<li id="instruction-step-6">Den Backofen auf 180°C vorheizen und zwei Backbleche mit Backpapier auslegen.</li>
<li id="instruction-step-7">Aus den Rollen ca. 30 Scheiben schneiden und zuerst zu einer Kugel formen. Dann jede Kugel zu einer ca. 4 cm langen Rolle formen und die Enden spitz zulaufen lassen. Die Rollen auf das Backblech legen und zu Hörnchen formen. Die Vanillekipferl ca. 15 Minuten backen. Sie sollten nicht zu dunkel werden.</li>
<li id="instruction-step-8">Alle Zutaten des weißen &#8222;Schnees&#8220; in einer Schüssel vermengen und die noch warmen Kipferl in dem Schnee wälzen. Dabei vorsichtig sein, denn die Kipferl sind sehr mürbe.</li>
<li id="instruction-step-9">Die Vanillekipferl auf einem Kuchengitter auskühlen lassen.</li>

				<p>&#8211; Anstatt von Mandeln können auch gemahlenen Mandeln verwendet werden.<br />&#8211; Wer keinen Food Processor hat, der benutzt einfach 100g Buchweizenmehl und keine Haferflocken.<br />&#8211; Mandelbutter ist am günstigsten wenn selbst gemacht. Im Supermarkt ist sie etwas teuer und wird als Mandelmus verkauft. Ich mag am liebsten das dunkle Mandelmus, weil dort die Schalen der Mandeln mitgemahlen wurden.<br />&#8211; Wer keine Mandelbutter oder Mandelmus zur Verfügung hat, der benutzt einfach 90g Kokosöl.<br />&#8211; Wer keine Chiasamen hat, kann auch gemahlenen Leinsamen 1:1 benutzen.</p>

Egal ob ihr ihn Porridge, Haferbrei oder Oatmeal nennt, in den kalten Wintermonaten gibt es bei mir nichts anderes zum Frühstück. Wer jetzt denkt, dass Porridge am Morgen nur etwas für Studenten mit viel Zeit ist, dem muss ich widersprechen. Dieses schnelle Vanille-Porrige braucht gerade mal drei Minuten für die Zubereitung. Dann noch 10 Minuten quellen lassen und fertig ist ein gesundes und sättigendes Frühstück. Ihr müsst in den 10 Minuten nicht einmal daneben stehen, sondern könnt die Zeit fürs Bad nutzen. Worauf wartet ihr also? Jetzt gibt es keine Ausrede mehr, Frühstück ausfallen zu lassen.</p>
