<p>Dieser Nudelsalat mit getrockneten-Tomaten-Pesto ist der Lieblings all meiner Freunde und Familie. Es gab noch nie jemanden, der ihn nicht geliebt hat und keinen Nachschlag wollte. Die Zutaten sind perfekt aufeinander abgestimmt und ergeben eine himmlische Kombination, die einen direkt Lust auf Italien macht. Seit einiger Zeit kann ich von sonnengetrockneten Tomaten gar nicht genug bekommen und füge sie zu quasi allem dazu: natürlich zum Salat, zu Reisgerichten und neuerdings auch zum Hummus (Rezept folgt!). <span id="more-1690"></span></p>
<p>Was muss ich im Angesicht der Zutaten denn eigentlich noch groß hinzufügen? Man kann mit diesem Rezept absolut nichts falsch machen und sich einfach nur sattessen. Deshalb fällt mein Kommentar heute eher kurz aus. Tut euch und euren Freunden den Gefallen und bringt den Salat zum nächsten Grillen mit. Ihr werdet der Held des Abends sein.</p>

<li id="instruction-step-1">Zuerst das Wasser aufsetzen und auf hoher Hitze zum Kochen bringen. Die Nudeln und etwas Salz dazu geben und nach Packungsanleitung al dente kochen.</li>
<li id="instruction-step-2">Während die Nudeln kochen, die Pinienkerne in einer kleinen Pfanne auf mittlerer Hitze ca. 3 &#8211; 4 Minuten goldbraun rösten. Dies kann je nach Herd und Pfanne länger oder kürzer dauern. Auf jeden Fall die Pinienkerne im Auge behalten, weil sie schnell anbrennen.</li>
<li id="instruction-step-3">Die Pfanne vom Herd nehmen und eventuell einen Esslöffel der Pinienkerne als Dekoration zur Seite stellen.</li>
<li id="instruction-step-4">Nun die Pinienkerne für die Pesto zusammen mit den getrockneten Tomaten, den Knoblauchzehen und dem gewaschenen Basilikum in einen Food Processor geben. Die Zutaten ca. 20 &#8211; 30 Sekunden zerkleinern. Dann das Olivenöl nach und nach dazugeben und weiter mixen, sodass sich alles gut miteinander vermischt und eine Pesto-artige Konsistenz annimmt.</li>
<li id="instruction-step-5">Nun den Salat vorbereiten. Dafür den Rucola waschen und trocknen und in eine große Salatschüssel geben. Die Tomaten ebenfalls waschen, halbieren oder vierteln und zum Rucola geben.</li>
<li id="instruction-step-6">Die Nudeln durch ein Nudelsieb abgießen und in die Schüssel umfüllen. Das Pesto drüber verteilen (ihr müsst nicht alles verwenden) und mit den Pinienkernen und ein paar Basilikumblättern dekorieren und servieren.</li>

				<p>Wer keine Gluten-Unverträglichkeit hat, kann auch Dinkel- oder Vollkornpasta verwenden.<br />Wer gegen Pinienkerne allergisch ist, kann diese durch Cashewkerne oder Sonnenblumenkerne ersetzen. Nur nicht vorher anrösten, da ihr Geschmack zu intensiv ist.<br />Seid kreativ und schnippelt noch Gemüse aus dem Kühlschrank rein, das eh aufgebraucht werden muss. Avocado, Paprika oder Pilze sind super.</p>
