Da wir jetzt in großen Schritten auf die dunkleren Jahreszeiten steuern, merke ich wie mein Körper so langsam wieder das Verlangen nach wärmenden, sättigenden Gerichten hat. Da ich dem Sommer aber noch nicht ganz abschwören will, gibt es zur Zeit einfach sommerliche Blattsalate mit etwas herbstlicheren Toppings wie Roter Bete und Linsen. Eine tolle Herbst-Kombi wie ich finde. Die Linsen bilden eine sättigende Grundlage, die unseren Körper mit wichtigen Proteinen und Ballaststoffen versorgt. Dadurch bleiben wir länger satt und die Ballaststoffe verhindern, dass unser Blutzuckerspiegel rapide einsteigt. <span id="more-2172"></span>Brunnenkresse habe ich erst dieses Jahr für mich entdeckt. Im Sommer waren wir ein paar Wochen in meiner zweiten Heimat North Carolina, wo wir mit Freunden in einer süßen kleinen Brauerei essen waren, die einen Mix aus typischem Southern Food und Thaiküche anbietet. Alle Zutaten regional und vieles Bio. Dort habe ich ein unglaublich leckeres veganes Pad Thai gegessen, das mit Brunnenkresse bestreut war. Eine unglaubliche Kombi &#8211; ich kann es während ich dies hier schreibe immer noch förmlich schmecken.</p>

Es steckt wie die meisten Blattgemüse voller Nitrat, einem Stoff, der vor allem Blutdrucksenkende Wirkungen hat.<br />
Brunnenkresse kann man übrigens an Flussbetten selber sammeln oder man kauft es auf dem Wochenmarkt. Ich bestelle es immer bei meinem Händler des Vertrauens vor. Es ist nicht ganz billig &#8211; ein großes Bund kostet zwischen 3 und 5 Euro, dafür können locker vier Personen davon essen. Wer keine Brunnenkresse findet, der benutzt einfach herkömmliche Kresse und nutzt zur Fülle Rucola oder Feldsalat.</p>

<p>Folglich ist dieser Brunenkresse, Rote Bete und Avocado Salat mit Beluga Linsen ein wirklich gesunder Herbst-Salat, dessen Zutaten wirklich alles andere als langweilig sind. Zusammen mit dem süß-sauren Ahorn-Dijon-Dressing ist es wirklich kein langweiliger Salat, der allen Rote Bete und Avocado-Fans super gut schmecken wird.</p>

<li id="instruction-step-1">Den Backofen auf 200°C vorheizen.</li>
<li id="instruction-step-2">Die Rote Bete mit Handschuhen schälen, in mundgerechte Stücke schneiden und auf einem Backblech verteilen. Das Backblech am besten mit Backpapier auslegen. Die Rote Bete mit ein bisschen Ölivenöl beträufeln und Salz, Pfeffer und Kreuzkümmel drüberstreuen. Die Rote Bete für ca. 20 Minuten im Backofen rösten.</li>
<li id="instruction-step-3">In der Zwischenzeit die Linsen nach Anleitung in selbstgemachter Gemüsebrühe oder Wasser mit 1 TL Apfelessig kochen. Dies sollte ungefähr 15 &#8211; 20 Minuten dauern.</li>
<li id="instruction-step-4">Nun die Brunnenkresse und Blattsalate waschen, die Avocado halbieren, entkernen und das Fleisch mit einem Löffel herausschaben.</li>
<li id="instruction-step-5">Während die Rote Bete und die Linsen abkühlen, das Dressing vorbereiten. Dafür alle Zutaten in eine Schüssel geben und mit einem Löffel oder Schneebesen gut verrühren.</li>
<li id="instruction-step-6">Die Pekannüsse kurz in einer beschichteten Pfanne anrösten. Das dauert ungefähr drei Minuten. Einfach die Nüsse in die Pfanne geben und erhitzen, bis die Nüsse herrlich duften aber nicht angebrannt sind. Ihr braucht hierfür kein Öl!</li>
<li id="instruction-step-7">Ihr könnt den Salat ein einer großen Schüssel zusammenfassen, aber ich mag ihn gerne gleich auf den Tellern anrichten. Dafür als untere Schicht die Brunnenkresse und Blattsalate auslegen, dann die Linsen drüber geben, anschließend die Rote Bete und die Avocado oben drauf. Die Pekannüsse über dem Salat verteilen und das Dressing drüber gießen.</li>
