<p>Heute gibt&#8217;s wieder ein neues super schnelles Rezept, das perfekt fürs Büro, die Uni oder ein schnelles Abendessen ist. Ich liebe es und ich bin mir sicher, dass es auch euch überzeugen wird. </p>

<p>Weiter geht’s mit diesem sensationell einfachen mediterranen Quinoa, das diesmal sogar nur 25 Minuten braucht und keine 30. Die Zutaten gibt’s auch wirklich in jedem Supermarkt. Es ist tatsächlich eines der Rezepte, das es bei mir (und sicherlich bald auch bei euch) mindestens einmal die Woche geben wird, weil es so simpel ist und trotzdem super interessant schmeckt.</p>



<p>Das ganze Gericht besteht aus nur 5 Zutaten: Zwiebel, Paprikapulver, Tomatenmark, getrockneten Tomaten und Quinoa. Optional kann man es dann noch mit Pinienkernen, Oliven, Rucola und Basilikum verfeinern.</p>



<p>Das tolle an diesem Rezept ist, dass es so mega vielfältig einsetzbar ist. Ich habe es mir in den letzten Wochen häufig zum Mittag gemacht und mit gebratenem oder geröstetem Ofengemüse verputzt, im Salat mit Rucola verwendet oder als Basis einer Bowl eingesetzt. Ein Rezept – drei Varianten sozusagen.</p>



<p>Quinoa gibt es übrigens jetzt schon aus der Region, weil es einige Bauern hier bereits anbauen. So kann man tatsächlich schon heimisches Quinoa für dieses Rezept verwenden. Finde ich super spannend, gerade weil ich wirklich sehr viel Quinoa esse. Es ist aber auch wirklich ein wunderbares Korn, weil es nicht nur alle essentiellen Aminosäuren enthält, sondern auch noch die Aminosäure L-Tryptophan. Diese coole Aminosäure unterstützt die Produktion des Glückshormons Serotonin. Quinoa macht also wirklich glücklich!</p>



<p>Ich bin mir sicher, dass euch das Rezept ganz genauso gut schmecken wird, wie es mir schmeckt! Es ist auf den ersten Blick fast schon zu einfach, aber glaubt mir – einfach bedeutet nicht in diesem Fall bestimmt nicht langweilig.</p>

<li id="instruction-step-1" class="instruction">Die Zwiebel fein würfeln, das Quinoa gut waschen, die getrockneten Tomaten kleinschneiden.</li>
<li id="instruction-step-2" class="instruction">Das Olivenöl in einem Kochtopf erhitzen. Die Zwiebeln darin ca. 1 Minute anbraten. Das Paprikapulver und Tomatenmark dazugeben und eine weitere Minute anbraten. Das Quinoa, Wasser und getrocknete Tomaten dazugeben und bei hoher Hitze aufkochen. Die Hitze reduzieren und das Quinoa ca. 15 Minuten köcheln lassen bis das Wasser verdampft ist.</li>
<li id="instruction-step-3" class="instruction">In der Zwischenzeit die Pinienkerne in einer Pfanne ohne Öl ca. 5 Minuten rösten. Achtung, sie brennen schnell an, also nicht aus den Augen lassen. Die Paprika in mundgerechte, kleine Stücke schneiden.</li>
<li id="instruction-step-4" class="instruction">Den Rucola und Basilikum waschen, trocknen und den Basilikum grob hacken und zusammen mit der Paprika unter das gekochte Quinoa heben. Mit Meersalz und Pfeffer abschmecken. Mit Rucola, Pinienkernen und Kalamata-Oliven warm servieren.</li>
