Aber heute gibt es auf dem Blog erst einmal etwas, das vielleicht weniger in die Kategorie „gesund“ fällt, dafür aber definitiv in die Kategorie „OMG, ist das geil!!!!!!“. Dabei handelt es sich um etwas so unfassbar einfaches wie Blumenkohl in einer unglaublich leckeren Sauce und umhüllt von einem knusprigen Teigmantel.<span id="more-7306"></span></p>

Braunes Reismehl und Mandelmilch, sowie leckere Gewürze, die dem geschmacksneutralen Blumenkohl einen geräucherten Geschmack verleihen. Ich hatte noch Vollkornreismehl vorrätig, aber ihr könnt natürlich auch Mehl eurer Wahl, z.b. Kichererbsenmehl, Hirsemehl oder Buchweizenmehl verwenden. Ich mag jedoch das ebenfalls geschmacksneutrale Vollkornreismehl in diesem Rezept super gerne.</p>

Ich bin zwar definitiv kein Fußball-Fan, doch an der WM kommt man im Juni wohl nicht vorbei. Muss man ja auch nicht. Ich sehe solche Spektakel positiv, weil man endlich mal wieder mit Freunden zusammenkommt, grillt oder sonst einen schönen Abend hat.</p>
<p>Deshalb habe ich einige Finger Food Rezepte für euch vorbereitet, die ich diese und nächste Woche mit euch teilen möchte: den Anfang machen diese Woche die „Spicy Cauliflower Wings“, wie ich sie auf English genannt habe.</p>

Dass ich das hier jemals schreiben würde, hätte ich wohl nie für möglich gehalten. Ich glaube, Jannis ist heute so stolz auf mich. Er hat den Blumenkohl auf jeden Fall mega gefeiert. Ich hoffe, ihr werdet es auch tun. Damit wir – sollte es keinen konsekutiven Weltmeisterschaftstitel geben – wenigstens etwas zu feiern haben.</p>

<li id="instruction-step-1">Den Backofen auf 200°C Umluft vorheizen.</li>
<li id="instruction-step-2">Den Blumenkohl waschen, die Blätter entfernen und den Blumenkohl in mundgerechte Röschen schneiden.</li>
<li id="instruction-step-3">Für den Teig, das Vollkornreismehl, die Gewürze, Salz und Pfeffer in einer großen Rührschüssel vermengen. Die Mandelmilch hinzugießen und mit einem Schneebesen umrühren. Esslöffel für Esslöffel Wasser dazugeben, bis der Teig gut dickflüssig ist und so ungefähr die Konsistenz von etwas wässrigem Hummus hat.</li>
<li id="instruction-step-4">Zwei Backbleche mit Backpapier auslegen. Jedes Blumenkohl-Röschen in den Teig dippen und überschüssigen Teig abschütteln. Die Röschen weit genug entfernt voneinander auf den Backblechen verteilen und ca. 25 Minuten backen.</li>
<li id="instruction-step-5">In der Zwischenzeit alle Zutaten für die Sauce in einer kleineren Schüssel vermengen und gut verrühren.</li>
<li id="instruction-step-6">Den Blumenkohl nach 25 Minuten herausnehmen und mit etwas Sauce mithilfes eines Küchenpinsels bestreichen. Falls kein Küchenpinsel zur Hand ist, die Blumenkohl-Röschen leicht in die Sauce dippen und zurück aufs Blech legen. Den Blumenkohl mit der Sauce weitere 15-20 Minuten backen. Die letzten Minuten eventuell die Temperatur auf 180°C reduzieren und beobachten, dass nichts anbrennt.</li>

Anders als die traditionelle Bechamelsauce ist diese nicht auf Sahne und Butter basiert, sondern auf Blumenkohl, der püriert eine herrlich cremige Konsistenz einnimmt. <p>Im Vergleich zur traditionellen Lasagne, versorgt euch diese Variante mit vielen wichtigen Nährstoffen wie Vitamin A, was beispielsweise wichtig für unsere Sehkraft ist. Eine Portion Blumenkohl (120g) enthält außerdem fast 75% unseres täglichen Vitamin C Bedarfs. Außerdem steckt es voller Mangan, wodurch es eine super Antioxidantien-Quelle ist. Ganz nebenbei hat Blumenkohl auch entzündungshemmende Eigenschaften, was zum größten Teil seinem hohen Anteil an Vitamin K zuzuschreiben ist.</p>

Dadurch wird die Lasagne nicht weniger gesund und schmeckt dem einen oder anderen vielleicht doch etwas besser. Frei nach dem Motto: Essen sollte Spaß machen und kein Zwang sein. <li id="instruction-step-1">Zuccini und Blumenkohl waschen, die Karotten schälen und alles in mundgerechte dünne Scheiben schneiden. Karotten, Zucchini und Blumenkohl ca. 10 – 15 Minuten dämpfen oder kochen. Zur Seite stellen.</li>
<li id="instruction-step-2">In der Zwischenzeit die Tomatensauce zubereiten:</li>
<li id="instruction-step-3">Dafür die Zwiebel schälen und fein hacken. Den Knoblauch durch die Knoblauchpresse drücken. Die Chili aufschneiden (Handschuhe anziehen!), die Kerne entfernen und in Ringe schneiden.</li>
<li id="instruction-step-4">Öl in einem großen (beschichteten) Kochtopf erhitzen und Zwiebel, Knoblauch und Chili scharf anbraten.</li>
<li id="instruction-step-5">Tomaten und Gemüsebrühe dazugeben, mit einem Deckel bedecken und ca. 20 Minuten auf mittlerer Hitze reduzieren.</li>
<li id="instruction-step-6">Basilikum und Blätter von den Gewürzzweigen abtrennen und zur Sauce dazugeben. Ein bis zwei Minuten bei niedriger Hitze unterrühren und zur Seite stellen.</li>
<li id="instruction-step-7">Für die Blumenkohl-Bechamelsaue:</li>
<li id="instruction-step-8">Die Knoblauchzehe durch die Knoblauchpresse geben und zusammen mit allen Zutaten in einen Food Processor oder Mixer geben. Fein pürieren, mit Salz und Pfeffer abschmecken und zur Seite stellen.</li>
<li id="instruction-step-9">Zum Zusammenstellen der Lasagne:</li>
<li id="instruction-step-10">Den Backofen auf 200°C vorheizen.</li>
<li id="instruction-step-11">Ein bis zwei Esslöffel Tomatensauce in einer 35&#215;25 cm großen Backform verteilen. Abwechselnd Lasagneplatten, ¼ des Gemüses plus eine Handvoll Spinat, ¼ Tomatensauce, ¼ Bechamelsauce schichten. Darauf achten, dass die oberste Schicht zum Schluss aus einem Mix aus Tomaten- und Bechamelsauce besteht.</li>
<li id="instruction-step-12">Mit den Pinienkernen bestreuen und ca. 30 Minuten bei 200°C backen. Wer nicht ganz auf Käse verzichten will, der bestreut die Lasagne mit etwa 120g Schafs-Fetakäse. Ihr werdet ihn aber auch nicht vermissen, wenn ihr es ohne Käse backt 😉</li>

Mein &#8222;armer&#8220; Freund musste dies leider auch die letzten paar Tage tun, weil ich einfach nicht genug von der Mischung dieser herrlichen Gewürze bekommen konnte. Jeder Bissen ist ein Genuss für die Sinne: die Süßkartoffeln, Möhren und der Blumenkohl harmonieren perfekt mit den Gewürzen und die Kokosmilch verleiht dem Gericht die himmlisch cremige Konsistenz. Ich mag es persönlich sogar noch cremiger und gebe gerne noch ein paar Esslöffel Erdnuss- oder selbst gemachte Mandelbutter hinzu &#8211; was den Geschmack des Curries noch einmal intensiviert.</p>

<p>Das tolle an Curries ist, dass man bei den Gemüsesorten sehr flexibel ist. Man kann z.B. einfach das Gemüse aufbrauchen, das man noch im Kühlschrank hat. Egal ob Auberginen, Zucchini, Kürbis, Kartoffeln oder Paprika, der Phantasie sind bei Curries keine Grenzen gesetzt. Wenn ihr also nicht alle Gemüsesorten in meiner Liste da habt, dann werdet einfach kreativ oder nutzt, was ihr noch im Haus habt. So machen Curries richtig Spaß, weil man immer wieder neue Geschmacksrichtungen ausprobieren kann. Beim Kochen kann man bei Curries auch wirklich nichts falsch machen. Nur das Gemüse schnibbeln, in den Topf geben und zwischen 40 und 60 Minuten köcheln lassen. Curries sind also das perfekte Gericht, wenn ihr gerade erst mit dem Kochen anfangt. Auch für größere Gruppen eignen sich Curries perfekt. Wenn ihr als das nächste Mal Freunde zu Besuch habt, dann überrascht sie doch einmal mit einem leckeren Thai Curry wie diesem hier. Eure Freunde werden begeistert sein und nie im Leben glauben, dass dieses Gericht wirklich gesund ist.</p>

<li id="instruction-step-1">Die Süßkartoffel und die Möhren schälen und in mundgerechte Stücke schneiden. Das Grün vom Blumenkohl trennen und den Blumenkohl-Kopf waschen und ebenfalls zerkleinern. Die Paprika halbieren, die Kerne entfernen und zerschneiden. Den Ingwer ungeschält kleinhacken.</li>
<li id="instruction-step-2">Das Olivenöl in einem großen Kochtopf, Pfanne oder Wok auf mittlerer bis hoher Stufe erhitzen. Den Ingwer und die Curry-Paste dazugeben und ca. eine Minute scharf anbraten.</li>
<li id="instruction-step-3">Nun die Möhren, Paprika und Blumenkohl dazugeben und ca. 10 Minuten auf mittlerer Hitze garen. Nun die Süßkartoffeln in die Pfanne geben und mit der Kokosmilch ablöschen.</li>
<li id="instruction-step-4">Die Gewürze und Tamari oder Sojasoße hinzugeben. Sofern ein Deckel vorhanden ist, nun den Deckel auf die Pfanne oder den Topf geben und ca. 40 Minuten köcheln lassen.</li>
<li id="instruction-step-5">Wer braunen Reis zu dem Curry genießen will, der sollte nach ca. 10 bis 15 Minuten das Wasser für den Reis aufsetzen, da brauner Reis ca. 25 bis 30 Minuten im Wasserbad kochen muss.</li>
<li id="instruction-step-6">In der Zwischenzeit den Koriander waschen und fein zerkleinern.</li>
<li id="instruction-step-7">Sobald sich die Süßkartoffeln mit einer Gabel zerdrücken lassen, die Hitze auf die unteren Stufen reduzieren. Wer es cremig mag, der gibt noch die Erdnuss- oder Mandelbutter hinzu. Zum Schluss den gewaschenen Spinat unterrühren bis dieser komplett eingefallen ist.</li>
<li id="instruction-step-8">Mit dem Koriander bestreuen und mit braunem Reis, Buchweizen oder Quinoa servieren.</li>
