Deswegen gibt es heute einen meiner Lieblingssalate: Quinoa-Taboulé mit Za&#8217;atar. Wie ihr vielleicht bereits in meinem <a href="https://heavenlynnhealthy.de/gebackene-avocados-mit-zaatar-gewuerz-reis-und-kichererbsen/">gebackene Avocados</a> Rezept gemerkt habt, bin ich ein großer Fan der nordafrikanischen Gewürzmischung Za&#8217;atar. Der Mix aus den Gewürzen Sumach, Thymian und geröstetem Sesam passt meiner Meinung nach zu so vielen Gerichten und wertet diese geschmacklich absolut auf. <span id="more-3723"></span></p>
<p>Eines meiner ersten Rezepte auf diesem Blog war dieses <a href="https://heavenlynnhealthy.de/hirse-taboule/">Hirse-Taboulé</a>. Wenn man einmal von den schrecklichen Fotos absieht, ist es immer noch eins meiner Lieblingsgerichte. Da Quinoa aber viel prominenter als Hirse ist, zumindest im Moment, gibt es heute eine Variante mit Quinoa und Za&#8217;atar. Quinoa ist nicht zu unrecht so populär zur Zeit. Es enthalt alle essentiellen Aminosäuren, was es zu einem kompletten Protein macht. Es ist von Natur aus glutenfrei, kann also ohne Bedenken von Menschen, die unter Zöliakie leiden gegessen werden. Es sei denn du bist meine Schwester und hast dir das leckere &#8222;Korn&#8220; übergegessen. Dann empfehle ich dir wie gesagt, mein Hirse-Taboulé.</p>

<p>Was ich an Taboulé so liebe, ist, dass der Salat eigentlich komplett aus Petersilie besteht. Petersilie wird übrigens in den USA gerade als das neue Superfood gehyped &#8211; das heißt, der &#8222;Back to the Roots&#8220;-Trend bleibt weiterhin bestehen. Nach Grünkohl kam die Brunnenkresse und jetzt eben die Petersilie. Wie die meisten grünen Pflanzen, strotzt Petersilie nur so vor Vitamin K, was wichtig für unsere Blutgerinnung und starke Knochen ist. Petersilie enthält ebenfalls eine stolze Menge Vitamin C, Vitamin A und viele weitere Mineralstoffe und Spurenelemente.</p>

				<h4>Für den Salat:</h4>
<ol>
<li id="instruction-step-1">Das Quinoa abspülen, in einem Kochtopf geben und mit circa 200 ml Wasser bedecken. Circa 12 &#8211; 15 Minuten kochen oder bis sich um das Korn kleine Ringe gebildet haben. Abgießen und zur Seite stellen.</li>
<li id="instruction-step-2">Das Gemüse waschen und in kleine Stücke schneiden. Die Kräuter waschen, trocknen und fein hacken. Alles in eine Salatschüssel füllen.</li>
<li id="instruction-step-3">Das Dressing zusammen geben und über dem Salat verteilen. Zum Schluss das Za&#8217;atar drüberstreuen.</li>
<li id="instruction-step-4">Sofort servieren oder kalt stellen.</li>
</ol>
<h4>Für die Za&#8217;atar Gewürzmischung</h4>
<ol>
<li id="instruction-step-5">Den Sesam in einer Pfanne auf mittlerer Hitze rösten, bis er gold-braun ist. Vom Herd nehmen und in einer Schüssel abkühlen lassen. Die anderen Gewürze dazugeben und gut vermengen. Luftdicht verschlossen hält sich Za&#8217;atar viele Monate.</li>
