Medjool Datteln enthalten zwar viel Zucker, dafür aber auch eine Menge Ballaststoffe, die uns länger satt halten und verhindern, dass unser Blutzuckerspiegel rapide ansteigt oder abfällt. Medjool-Datteln enthalten außerdem Eisen, was den Transport von Sauerstoff durch unseren Körper fördert. <li id="instruction-step-1">Den Backofen auf 180°C vorheizen und eine Backform mit Kokosöl einfetten oder mit Backpapier auslegen. Dann das Kürbispüree vorbereiten. Eine ausführliche Anleitung gibt es in diesem Beitrag für selbstgemachtes Kürbispüree.</li>
<li id="instruction-step-2">Während der Kürbis im Ofen gart, die Mandeln in einen Food Processor geben und zu einem feinen Mehl zermahlen.</li>
<li id="instruction-step-3">Die Medjool-Datteln entsteinen und mit einer Gabel zu einem Mus zerdrücken. Wer einen sehr starken Food Processor hat, der kann diesen Schritt auslassen und die Datteln sofort zu den gemahlenen Mandeln geben.</li>
<li id="instruction-step-4">Die Mandeln mit den Datteln zu einer süßen Paste vermengen. Dies kann einige Sekunden (20 &#8211; 30) dauern. Wahrscheinlich müsst ihr die Masse mit einem Teigschaber von den Wänden des Food Processors abschaben, da sich die Klebriges dort gerne festsetzt.</li>
<li id="instruction-step-5">Die restlichen Zutaten dazugeben und alles zu einem Teig verrühren.</li>
<li id="instruction-step-6">Den Teig in die Backform geben und mit dem Schaber gleichmäßig verteilen.</li>
<li id="instruction-step-7">Die Kürbis-Brownies ca. 40 &#8211; 50 Minuten backen bis an einem hereingesteckten Messer kein Teig mehr kleben bleibt.</li>
<li id="instruction-step-8">Die Brownies aus dem Ofen holen und mindestens 30 &#8211; 40 Minuten auskühlen lassen. Dies ist ganz wichtig, denn hier damit sich der Teig setzen kann und schön saftig zusammenklebt.</li>
