Mein Freund liebt Pad Thai weswegen ich mich nun endlich selber an das Thailänder Original gemacht habe. Das Resultat ist wirklich himmlisch &#8211; nicht nur mir, sondern meiner gesamten Familie hat es geschmeckt. Mein Freund und meine Schwester wollten allerdings partout nicht auf ihr Ei im Pad Thai verzichten, weswegen ich mir meine Portion abgefüllt habe bevor sie das ganze mit Ei angebraten haben. Naja, ich sage dazu nur soviel: ihre Gabel wanderte des öfteren auf meinen Teller, was meine Behauptung stützt, dass eierloses Pad Thai genauso gut schmeckt wie die traditionelle Variante. Die Fischsauce habe ich ebenfalls weggelassen und mit einer leckeren Erdnusss-Sauce ersetzt, was dem Geschmack aber nicht geschadet hat.<br />
<span id="more-1757"></span>Das tolle an diesem Pad Thai Rezept ist, dass das Gemüse durch den Spiralschneider gegeben wird und so größtenteils als Nudeln verwendet wird &#8211; somit enthält es mehr Gemüse und weniger Kohlenhydrate und folglich mehr Nährstoffe. Ich habe in diesem Rezept Zucchini und Karotten verwendet, weil die sich am einfachsten „spiralisieren“ lassen, aber ihr könnt gerne anderes Gemüse verwenden, da ist der Kreativität keine Grenzen gesetzt.<br />
Wer gegen Erdnüsse allergisch reagiert kann diese gerne durch Mandelbutter ersetzen oder einfach komplett weglassen &#8211; natürlich schmeckt es dann nicht genauso, aber ist trotzdem immer noch lecker &#8211; versprochen.</p>

<li id="instruction-step-1">Die Reisnudeln in eine große Schüssel geben und mit kochendem Wasser übergießen und ca. 10 Minuten quellen lassen.</li>
<li id="instruction-step-2">In der Zwischenzeit das Gemüse waschen und durch den Spiralschneider geben. Die rote Paprika halbieren, entkernen und in Streifen schneiden. Den Rotkohl in Streifen schneiden. Die Erdnüsse grob hacken. Den Koriander waschen, trocken tupfen und ebenfalls grob hacken.</li>
<li id="instruction-step-3">Für die Sauce einfach alle Zutaten in eine Küchenmaschine (Food Processor) geben und ca. 30-60 Sekunden verrühren. Wenn ihr keine Küchenmaschine habt, dann gebt den Knoblauch durch eine Knoblauchpresse, reibt den Ingwer oder schneidet ihn in keine Stücke, gebt die restlichen Zutaten dazu und verrührt alles gut mit einem Schneebesen oder einer Gabel.</li>
<li id="instruction-step-4">Nun das Öl in einer großen Pfanne oder Wok auf mittlerer Stufe erhitzen. Das Gemüse dazugeben und ca. 3 Minuten anbraten bis es gar, aber trotzdem noch bissfest ist. Wenn ihr keinen Spiralschneider habt und das Gemüse in Stücke geschnitten habt, dann braucht es eventuell etwas länger um gar zu werden. Das Gemüse nicht zu lange braten, da es sonst sabschig wird.</li>
<li id="instruction-step-5">Die Erdnuss-Sauce und die Reisnudeln hinzugeben und zwei bis drei Minuten anbraten, bis sich die Nudeln die Sauce aufgenommen haben.</li>
<li id="instruction-step-6">Die Erdnüsse und Koriander oder Basilikum auf den Nudeln verteilen und sofort servieren.</li>

<p>Nussbutter-Aufstriche gehören seit langer Zeit zu den Dingen, die ich immer im Haus habe und die ich &#8211; so kommt es mir manchmal vor &#8211; fast zweimal die Woche zubereite, weil mein Freund und ich einen enormen Nussbutter-Konsum haben. Mandelbutter steht bei uns zwar ungeschlagen auf Nummer Eins, doch diese etwas salzigere Cashew Butter mit Meersalz hat in den letzten Wochen doch sehr stark aufgeholt. Wir essen sie derzeit wirklich zu allem &#8211; im Curry anstatt Peanut Butter, auf Brot, im Müsli und mit leckeren Apfelstücken als Snack zwischendurch. Die Cashew Butter ist echt der perfekte Butter-Ersatz: probiert sie einmal auf Brot mit selbstgemachte Marmelade und ihr werdet wissen wovon ich rede &#8211; einfach himmlisch. Wer also Peanut Butter mag, der wird Cashew Butter genauso lieben. Cashew Butter schmeckt allerdings ganz anders als Mandelbutter, denn die beiden Nüsse haben einen komplett unterschiedlichen Geschmack. Wie alle Nüsse stecken auch Cashewkerne voller guter einfach-ungesättigten Fettsäuren. Diese schützen unser Herz und beugen Herz-Kreislauf-Erkrankungen vor. Außerdem sind Cashews ein guter Lieferant von Mangan, ein Mineralstoff, der wichtig für unsere Knochen, Nerven und die Schilddrüse ist.<span id="more-1513"></span><br />
Nicht umsonst habe ich diesen Aufstrich &#8222;Butter&#8220; genannt, denn Cashew Butter enthält einen ziemlich hohen Fettgehalt und obwohl es gute Fette sind, sollte man den täglichen Bedarf an Fettsäuren auch mit dieser Butter nicht überschreiten. Esst einfach alles in Maßen und ihr werdet keine Probleme haben. Ein bis drei Teelöffel am Tag sind total ok und super gesund.</p>

<p>Den Backofen auf 180 °C vorheizen. Die Cashews auf einem Backblech verteilen und ca. 8 &#8211; 10 Minuten im Backofen rösten. Dabei immer daneben stehen damit die Nüsse nicht anbrennen.<br />
Die Cashews aus dem Backofen holen und komplett erkalten lassen.<br />
Die Nüsse dann in einen Food Processor geben und ca. 10 Minuten zerkleinern, bis die Cashews zu einer Butter herunter gebrochen sind. Dann das Meersalz hinzugeben und noch einmal ca. 10 Sekunden umrühren.</p>
<p style="text-align: center;">In einem Glascontainer hält sich die Cashew Butter ca. zwei bis drei Wochen im Kühlschrank.</p>

<p>Auch das Rezept ist schnell gemerkt &#8211; einfach ein Teil Wassermelone mit einem Teil Erdbeeren in den Mixer geben und fertig ist der leckerste Sommer-Smoothie. Gerne gebe ich auch etwas Minze dazu, was den Smoothie noch etwas erfrischender macht. Erdbeeren und Wassermelone sind im Smoothie einfach wie füreinander gemacht. Erdbeeren sind wie alle Beeren voller Antioxidantien, die unseren Körper vor freien Radikalen schützen. Minze ist ein echtes Heilkraut und wird gerne gegen Bauchschmerzen eingesetzt, da es verdauungsförderlich ist.</p>
