<p>Heute gibt es eine schnelle thailändische Kokossuppe, von mir auch liebevoll Tom Kha Veggie gennant.</p>
<p>Wenn ihr meinem Blog schon lange folgt, dann wisst ihr sicherlich, wie gerne ich die thailändische Küche liebe. Letzten Winter war die<a href="https://heavenlynnhealthy.de/20-minuten-gruene-thai-curry-nudelsuppe/"> 20-Minuten grüne Thai Curry Suppe</a> die meistgekochte Suppe in meinem Haushalt. Diesen Herbst essen Jannis und ich wöchentlich diese neue Variante, die komplett ohne Currypaste auskommt.</p>
<p>Yay! Keine funny Zutaten! Naja, fast. Natürlich wäre es keine thailändische Kokossuppe, wenn nicht irgendwelche thailändischen Gewürze in der Zutatenliste vorkommen würden. Das Gute ist: die meisten davon bekommt ihr sogar in gut sortierten Supermärkten wie Rewe, Edeka und Co. Ihr braucht zum einen Zitronengras und zum anderen getrocknete Limettenblätter. Jetzt bitte nicht die Hände überm Kopf zusammenschlagen, sondern weiterlesen! Es ist gar nicht so kompliziert.<span id="more-4531"></span></p>

<p>Zitronengras bekommt ihr wie gesagt bereits in ganz normalen Supermärkten. Es ist DIE Zutat in der traditionellen Tom Kha Gai und gibt ihr den unvergleichbaren thailändischen Geschmack. Die zweite exotische Zutat sind Limettenblätter. Die habe ich für ca. einen Euro im Asialaden meines Vertrauens gekauft. Eine Tüte enthält genug getrocknete Blätter für mindestens einen Winter in der ihr diese Suppe wöchentlich esst. Eigentlich gehört auch  noch Galangal in die Suppe, die typische Wurzel, die der Tom Kha ihren Namen gibt. Da diese jedoch schwer zu finden ist in Deutschland, könnt ihr einfach Ingwer benutzen. Die xotischen Zutaten werden euch diesen Monat nicht in die Miese stürzen, im Gegenteil. Hand aufs Herz wer mindestens einmal die Woche in irgendeiner Form beim Asiaten essen geht. Wenn ihr ab jetzt also eure Tom Kha Veggie selber macht, dann werden ihr quasi dran verdienen.</p>

<p>Die Idee für diese Suppe habe ich übriengs von meiner Blogger Freundin Marie von einem meiner Lieblingsblogs 8thandlake. Marie hat vor ein paar Wochen diese Version ihrer <a href="http://www.8thandlake.com/home/2016/7/13/thai-style-coconut-soup-tom-kha-vegan-gluten-free">Thai Style Coconut Soup</a> gepostet und da sie es so einfach hat aussehen lassen, musste ich einfach meine eigenen Version ausprobieren. Ich finde, dass die Zugabe von den Limettenblättern wirklich geschmacklich noch einmal einiges her macht, deswegen ist dies eine der wichtigsten Zutaten in dieser Suppe. Beim Gemüse könnt ihr übrigens ganz frei sein. Gerade im Winter ist chinesischer Weißkohl auch ganz toll für dieses Rezept geeignet!</p>

<p>Die frischen Gewürze wie Ingwer und Zitronengras sind übrigens die perfekten Zutaten für Erkältungsgeplagte und helfen toll bei Winterblues.</p>

<p>Es ist quasi eine heiße Zitrone mit Ingwer und Honig nur als Suppe und halt auf thailändisch.</p>
<p>Woooooo! Jetzt hab ich auch den letzten unter euch überzeugt oder?</p>
<p>Ich hoffe sehr, denn diese Suppe ist wirklich ein tolles, einfaches und schnelles Rezept für kalte Wintertage. Wirklich was ganz leckeres und wohliges.</p>

<li id="instruction-step-1">Die Paprika und Zucchini waschen und in mundgerechte Stücke schneiden. Ich halbiere die Zucchini einmal und schneide sie dann in 1/2 cm dicke Scheiben. Die Pilze putzen und in Streifen schneiden. Die Cherrytomaten waschen und halbieren. Die Chili vorsichtig, am besten mit Handschuhen aufschneiden, die Kerne entfernen und fein hacken.</li>
<li id="instruction-step-2">Das Zitronengras mit einem Messer oder schweren Gegenstand zerdrücken &#8211; dadurch können sich die Aromen besser entfalten. Das Zitronengras in 3cm große Stücke zerschneiden. Den Ingwer fein hacken. Zitronengras und Ingwer zusammen mit der Kokosmilch, Wasser und selbst gemachter Gemüsebrühe in einen Topf geben und kurz aufkochen. Nun die Paprika, Zucchini, Pilze, Cherrytomaten und Limettenblätter dazugeben, die Hitze reduzieren und ca. 10 Minuten leicht köcheln lassen.</li>
<li id="instruction-step-3">Nun den Saft der beiden Limetten sowie Kokosblütenzucker und Honig dazugeben und weitere 3 &#8211; 5 Minuten köcheln lassen.</li>
<li id="instruction-step-4">Vorsichtig das Zitronengras und Limettenblätter aus der Suppe fischen, so gut es eben geht. Mit Salz und evtl. mehr Limettensaft abschmecken.</li>
<li id="instruction-step-5">Die Suppe mit frischem Thai-Basilikum, Koriander und schwarzem Sesam garnieren und sofort servieren.</li>

										<content:encoded><![CDATA[<p>Wie ihr seht, war ich am Wochenende wieder fleißig und habe ein neues Video gedreht. Die Küche meiner Eltern bot sich gerade wegen der lichtdurchfluteten Gegend um den Herd an, was in meiner Lüneburger Wohnung leider nicht der Fall ist. In diesem Video habe ich gleich mal eurer Feedback eingearbeitet und zwar habe ich zu jeder Zutat dazugeschrieben, warum es sich lohnt sie in die Ernährung mit aufzunehmen. Für genaue Mengenangaben habe ich unten noch einmal das Rezept aufgelistet. <span id="more-3162"></span></p>
<p>Wenn ihr mir auf Instagram folgt, dann wisst ihr, wie oft es dieses gesunde Pad Thai bei uns zu Hause gibt: mindestens 2 &#8211; 3 mal die Woche. Es ist wirklich eins meiner Lieblingsgerichte, vor allem weil es so eine tolle Art ist, mehr Gemüse zu essen. Das echte Highlight dieses Pad Thai ist die Erdnusssauce, die einfach nur himmlisch schmeckt. Wenn ihr gegen Erdnüsse allergisch seid, dann könnt ihr auch Mandelbutter benutzen. Ich habe es zwar noch nie mit Tahin ausprobiert, aber ich vermute, dass es auch lecker schmecken wird.</p>

<li id="instruction-step-1">Die Reisnudeln in eine große Schüssel geben und mit kochendem Wasser übergießen und ca. 10 Minuten quellen lassen.</li>
<li id="instruction-step-2">In der Zwischenzeit das Gemüse waschen und durch den Spiralschneider geben. Die rote Paprika halbieren, entkernen und in Streifen schneiden. Den Rotkohl in Streifen schneiden. Die Erdnüsse grob hacken. Den Koriander waschen, trocken tupfen und ebenfalls grob hacken.</li>
<li id="instruction-step-3">Für die Sauce einfach alle Zutaten in eine Küchenmaschine (Food Processor) geben und ca. 30-60 Sekunden verrühren. Wenn ihr keine Küchenmaschine habt, dann gebt den Knoblauch durch eine Knoblauchpresse, reibt den Ingwer oder schneidet ihn in keine Stücke, gebt die restlichen Zutaten dazu und verrührt alles gut mit einem Schneebesen oder einer Gabel.</li>
<li id="instruction-step-4">Nun das Öl in einer großen Pfanne oder Wok auf mittlerer Stufe erhitzen. Das Gemüse dazugeben und ca. 3 Minuten anbraten bis es gar, aber trotzdem noch bissfest ist. Wenn ihr keinen Spiralschneider habt und das Gemüse in Stücke geschnitten habt, dann braucht es eventuell etwas länger um gar zu werden. Das Gemüse nicht zu lange braten, da es sonst sabschig wird.</li>
<li id="instruction-step-5">Die Erdnuss-Sauce und die Reisnudeln hinzugeben und zwei bis drei Minuten anbraten, bis sich die Nudeln die Sauce aufgenommen haben.</li>
<li id="instruction-step-6">Die Erdnüsse und Koriander oder Basilikum auf den Nudeln verteilen und sofort servieren.</li>
