<p>Kennt ihr Peanut Butter &amp; Jelly Sandwhiches? Diese schön-klebrigen U.S. amerikanischen Snacks auf ungetoastetem Weißbrot ohne Kanten? Im Grunde ist es nichts anderes als weißes Toastbrot mit Erdnussbutter und Gelee. Klingt scheußlich, ist aber echt lecker, wenn man das Weißbrot durch Vollkornbrot und das Gelee durch frische, süße Früchte ersetzt. Da ich die letzten zwei Wochen auf einer Hochzeit in den USA war, erinnerte ich mich wieder daran, wie gerne ich doch PB&amp;J Sandwhiches verputzt habe, in meiner Zeit in der High School und im College. Deswegen gibt es heute ein einfaches aber trotzdem leckeres amerikanisch-inspiriertes Peanut Butter &amp; Jelly Overnight Oats-Rezept.<span id="more-5489"></span>Nussbutter auf Vollkornbrot gehört zu meinen Lieblingssnacks &#8211; am besten schmeckt es, wenn man es mit Banane, frischen Erdbeeren oder Himbeeren zusammen isst. Ist für viele unvorstellbar, aber wenn man erst einmal drauf gekommen ist, dann will man nie wieder Marmelade essen. Erdnussbutter und etwas Süßes passen nämlich geschmacklich super zusammen. Und weil wir alle viel zu viel Brot essen, habe ich mein zweitliebstes Frühstück einfach mit meiner Liebe zu &#8222;Peanut Butter &amp; Fruits&#8220; verbunden. Herausgekommen sind meine allerliebsten Peanut Butter &amp; Jelly Overnight Oats.</p>
<p>So simpel, so schnell zubereitet und so nahhaft. Ihr braucht genau eine Minute für die Zubereitung. Inklusive Zutaten zusammensuchen und wegstellen kommt man dann denke ich so auf fünf Minuten maximal. Und schon habt ihr euch ein leckeres und gesundes Frühstück gezaubert. Man gibt für diese Overnight Oats nämlich einfach alle Zutaten in eine Schüssel, stellt diese in den Kühlschrank und geht ins Bett. Wenn man aufwacht, hat man ein leckeres Frühstück, das nicht nur gut verdaulich ist, sondern einem auch noch Energie für den ganzen Tag gibt. Ebenfalls enthält es durch das Erdnussmus wichtige pflanzliche Proteine, die euer sonstiges Frühstück sicherlich nicht gehabt hätte.</p>

Es hat sicher geholfen, dass meine amerikanische Zieh-Familie (die Familie meiner College-Mitbewohnerin) bekennende Demokraten-Familie ist. Für mich war es einfach ein wunderbares Erlebnis, Teil einer amerikanischen Hochzeit zu sein, inklusive Bridal Party und allem Drum Herum. Wir verbrachten zwei wunderbare Tage im schönen Asheville, einer Hippi-Stadt in den Bergen North Carolinas. Überall gab es Independent Stores, Coconut Lattes und Veggie-Burger. Ein Paradies für mich! Wenn ihr also mal im Süden der USA rumreisen solltet, dann schreibt euch Asheville dick und fett auf eure Liste.</p>
<p>Das Rezept für diese amerikanisch-angehauchten Overnight Oats ist wirklich so so simpel, dass ich auch nicht mehr viel dazu zu sagen habe als: probiert es aus. Ich bin mir ganz sicher, dass es vielen von euch richtig gut schmecken wird. Solltet ihr eine Erdnussallergie haben, dann tauscht das Erdnussmus einfach gegen Mandelmus oder auch Sonnenblumenmus aus. Ihr könnt natürlich auch mit den Zutaten spielen &#8211; wie jedes meiner Rezepte ist dies nur ein grober Guide, den ihr befolgen könnt, aber nicht müsst.</p>

<p>Schon als Kind war ich ein absolter Frühstücksmensch und das hat sich im Alter auch null verändert. Man kann mich nachts um drei Uhr wecken und ich habe Hunger. Morgens fällt es mir auch niemals schwer, gesund und ausgewogen zu essen, weil ich so früh am Tag besonders das Gefühl habe, meinem Körper etwas Gutes tun zu wollen.</p>

<p>Meiner Meinung nach ist es extrem wichtig, den Tag mit einem gesunden Frühstückchen zu starten um richtig in Schwung zu kommen. Ebenfalls ist es wichtig morgens zumindest einen kleinen Happen zu essen, um sich bei der Arbeit, in der Uni oder in der Schule wirklich konzentrieren zu können. Der Körper arbeitet während unseres Schlafes aktiv an der Verdauung, wo er viel Energie hineinsteckt &#8211; dieses Energietief muss morgens also erst einmal wieder gestopft werden.</p>

<p>Beim Durchblättern des <a href="https://www.alpro.com/de/fruehstueck/starthappy" target="_blank" rel="noopener">Alpro* H.A.P.P.Y. Booklets</a> für Junge und jung gebliebene ist mir sofort der beerige Chia Pudding ins Auge gefallen. Zum einen ist der wirklich wunderschön von Katharina Küllmer in Szene gesetzt worden und zum anderen schmeckt er einfach himmlisch. Der Chia Pudding besteht aus einer leckeren Schicht aus gefrorenen Brombeeren, Kokosnuss- und Mandeldrink und Chiasamen aber die absolute Krönung ist die Dattel-Erdnussbutter-Karamel-Crème.</p>
<p>Yup. Datteln und Erdnussbutter ergeben zusammen Karamel. Muss ich noch mehr sagen?</p>
<p>Mir schmeckt der beerige Chia Pudding am besten nach einem ausgiebigen Morgen-Workout, bzw. gerne esse ich auch ein paar Bissen vor meinem Morgenlauf, denn die kleinen Chiasamen sind wahre Energiespender.</p>

<p><em>&#8222;A Story by Heavenlynn Healthy&#8220; ist ein Video über meine Geschichte. Präsentiert von Kitchen Stories. </em></p>
<p>Vor einigen Wochen bekam ich Besuch von den Mädels und Jungs von <a href="https://kitchenstories.io/de" target="_blank" rel="noopener">Kitchen Stories</a> aus Berlin. Zusammen haben wir zwei ganze Tage lang gekocht, gefilmt, gelacht und komischerweise erstaunlich wenig gegessen, denn dafür blieb bei den ganzen Rezepten, die wir gedreht haben, irgendwie keine Zeit mehr. Etwas eingeschüchtert war ich natürlich schon als sich fünf junge Menschen aus der Großstadt Berlin bei mir angekündigt haben um sich meine Geschichte anzuhören. Doch schnell war klar, dass ich da auf fünf ganz besondere Menschen gestoßen war, die mir gleich die Angst und die Aufregung nahmen und einfach nur herzlich und super sympathisch waren.<span id="more-4838"></span></p>

<p>Balu war auch schnell der Mittelpunkt der Aufmerksamkeit, weshalb ihr ihn das ein oder andere Mal in dem Video bewundern könnt. Er hasst es allerdings fotografiert &#8211; oder schlimmer noch gefilmt &#8211; zu werden, was man ihm, wenn man ihn kennt auch ziemlich ansieht. Trotzdem bin ich sehr stolz auf den kleinen wie er die zwei Tage voller Hektik in seinem Haus gemeistert hat.</p>

Bei mir zu Hause in Lüneburg wäre dies leider nicht gegangen, da ich in einer kleinen Dachgeschoss Wohnung lebe.</p>

<p>Ich weiß, es war lange sehr still auf meinem YouTube Kanal, aber jetzt gibt es endlich wieder ein neues Video: meinen ersten Vlog. Für alle, die jetzt denken, dass ich bei der Tastatur einen nach links gerutscht bin: nein, ich habe mich nicht vertippt, denn ein Vlog ist ein Video-Blog. Ich wusste das selbst nicht bevor ich mich mit Vloggern auseinandergesetzt habe. Das tolle an Video-Blogeinträgen ist, dass sie so viel mehr zeigen können, als ich in kurzen Posts vorstellen kann. Ihr bekommt also einen Kurzeinblick in unseren London-Schwestern-Trip und findet vielleicht das ein oder andere Restaurant für euren nächsten Besuch.<span id="more-4226"></span></p>
<p>Vlogs übertragen Emotionen und Gefühle, weshalb ich gerade auf dem Themengebiet &#8222;Reisen&#8220; sehr gerne Vlogs schaue. Natürlich ist mein erster Vlog alles andere als perfekt, die Kamera wackelt, ich rede zu leise und auf Englisch mit deutschem Akzent. Stört mich aber nicht, denn es sind ja auch die London-Bilder und die Impressionen aus den Restaurants und Cafés, die ich mit diesem Video herüberbringen wollte. Leider rede ich in den wenigen Passgen, wo ich überhaupt rede, nur Englisch, da es für mich leichter war nur eine Szene zu drehen. Ich denke aber, dass dieser &#8222;Gesund Essen in London Vlog&#8220; auch für die Menschen, die der Englischen Sprache nicht mächtig sind, schöne Eindrücke vermittelt, denn Bilder sprechen ja bekanntlich eine universale Sprache&#8230;</p>

										<content:encoded><![CDATA[<p>Ich habe endlich das Video: Selbst gemachte Mandelbutter (Mandelmus) fertiggestellt und hoffe, dass es euch gefällt. Wie alle meine Videos ist es nicht perfekt, aber ich versuche das beste aus meinem Wohnzimmer und meinen technischen Geräten herauszuholen und ich denke, man kann gut erkennen wie ich in meiner kleinen Heavenlynn Healthy-Küche unseren Lieblingsaufstrich zubereite.<span id="more-3794"></span></p>
<p>Selbst gemachte Mandelbutter (Mandelmus) ist nicht nur lecker sondern auch sehr gesund. Sie steckt voller Proteine und guter einfach-ungestättigter Fettsäuren. Außerdem ist sie ein Beauty-Food, denn in Mandeln steckt viel Vitamin E, was für gesunde Haut, Haare und Nägel sorgt. Ein Grund mehr sich in der Mandelbutter zu verlieben. Außerdem ist sie unheimlich vielfältig einsetzbar. Ich liebe sie auf einer Scheibe Roggenbrot mit Banane, als Dip für Apfelstücke, oder als Butterersatz beim gesunden Backen. Selbst gemachte Mandelbutter macht einfach alles besser und kostet selbst gemacht viel weniger als die Variante aus dem Supermarkt. Neben Mandelbutter, ist auch <a href="https://heavenlynnhealthy.de/cashew-butter-mit-meersalz/">Cashew-Butter</a> in meinem Haushalt sehr beliebt. Tatsächlich kann man quasi jede Nuss in Nussbutter verwandeln. Probiert es doch mal mit eurer Lieblingsnuss aus!</p>

<li id="instruction-step-1">Den Backofen auf 180°C vorheizen. Die Mandeln auf einem Backblech verteilen und ca. 8 &#8211; 10 Minuten im Backofen rösten. Das Backblech aus dem Ofen nehmen und die Mandeln komplett erkalten lassen, sonst funktioniert das Rezept nicht. Achtung: je nach Backofenstärke kann die Röstzeit variieren. Bitte die Mandeln nicht aus den Augen lassen, damit sie nicht anbrennen. Das wäre schade und vor allem teuer.</li>
<li id="instruction-step-2">Die Mandeln in die Küchenmaschine geben und auf höchster Stufe ca. 4-5 Minuten herunterbrechen. Zuerst werden die Mandeln zu Mandelmehl und nach ein paar Minuten wird das Fett in den Mandeln freigesetzt, was letztendlich zur flüssigen Butter-Konsistenz führt. Nach 4-5 Minuten die Mandelbutter, die sich an den Rändern festgesetzt hat, mit einem Spartel herunter schieben. Weitere 5 Minuten auf hoher Stufe umrühren. Je nach Maschinenstärke müssen eventuell kurze Pausen eingelegt werden, damit das Gerät nicht heiß läuft. Wenn die Mandelbutter nach 10 Minuten noch keine flüssige Butter-Konsistenz erreicht hat, dann weitere 5 Minuten umrühren.</li>
<li id="instruction-step-3">In einem luftdichten Glas hält sich die Mandelbutter im Kühlschrank ca. 2 &#8211; 3 Wochen.</li>

										<content:encoded><![CDATA[<p>Wie ihr seht, war ich am Wochenende wieder fleißig und habe ein neues Video gedreht. Die Küche meiner Eltern bot sich gerade wegen der lichtdurchfluteten Gegend um den Herd an, was in meiner Lüneburger Wohnung leider nicht der Fall ist. In diesem Video habe ich gleich mal eurer Feedback eingearbeitet und zwar habe ich zu jeder Zutat dazugeschrieben, warum es sich lohnt sie in die Ernährung mit aufzunehmen. Für genaue Mengenangaben habe ich unten noch einmal das Rezept aufgelistet. <span id="more-3162"></span></p>
<p>Wenn ihr mir auf Instagram folgt, dann wisst ihr, wie oft es dieses gesunde Pad Thai bei uns zu Hause gibt: mindestens 2 &#8211; 3 mal die Woche. Es ist wirklich eins meiner Lieblingsgerichte, vor allem weil es so eine tolle Art ist, mehr Gemüse zu essen. Das echte Highlight dieses Pad Thai ist die Erdnusssauce, die einfach nur himmlisch schmeckt. Wenn ihr gegen Erdnüsse allergisch seid, dann könnt ihr auch Mandelbutter benutzen. Ich habe es zwar noch nie mit Tahin ausprobiert, aber ich vermute, dass es auch lecker schmecken wird.</p>

<li id="instruction-step-1">Die Reisnudeln in eine große Schüssel geben und mit kochendem Wasser übergießen und ca. 10 Minuten quellen lassen.</li>
<li id="instruction-step-2">In der Zwischenzeit das Gemüse waschen und durch den Spiralschneider geben. Die rote Paprika halbieren, entkernen und in Streifen schneiden. Den Rotkohl in Streifen schneiden. Die Erdnüsse grob hacken. Den Koriander waschen, trocken tupfen und ebenfalls grob hacken.</li>
<li id="instruction-step-3">Für die Sauce einfach alle Zutaten in eine Küchenmaschine (Food Processor) geben und ca. 30-60 Sekunden verrühren. Wenn ihr keine Küchenmaschine habt, dann gebt den Knoblauch durch eine Knoblauchpresse, reibt den Ingwer oder schneidet ihn in keine Stücke, gebt die restlichen Zutaten dazu und verrührt alles gut mit einem Schneebesen oder einer Gabel.</li>
<li id="instruction-step-4">Nun das Öl in einer großen Pfanne oder Wok auf mittlerer Stufe erhitzen. Das Gemüse dazugeben und ca. 3 Minuten anbraten bis es gar, aber trotzdem noch bissfest ist. Wenn ihr keinen Spiralschneider habt und das Gemüse in Stücke geschnitten habt, dann braucht es eventuell etwas länger um gar zu werden. Das Gemüse nicht zu lange braten, da es sonst sabschig wird.</li>
<li id="instruction-step-5">Die Erdnuss-Sauce und die Reisnudeln hinzugeben und zwei bis drei Minuten anbraten, bis sich die Nudeln die Sauce aufgenommen haben.</li>
<li id="instruction-step-6">Die Erdnüsse und Koriander oder Basilikum auf den Nudeln verteilen und sofort servieren.</li>

<p>Wie versprochen habe ich es heute Morgen noch geschafft auch das zweite Video auf deutsch hochzuladen. Vielen Dank übrigens für euer positives Feedback zur Erweiterung meines Blogs auf YouTube. Ich hatte extrem viel Spaß beim Drehen und werde sicherlich in Zukunft noch ein paar mehr Videos machen. Was würdet ihr denn gerne ich den kommenden Videos für Rezepte sehen? Soll ich alte Rezepte kochen oder gleich die neuen? Was sind eure Lieblingsrezepte auf dem Blog, die ihr unbedingt mal live in der Zubereitung sehen würdet? <p>Nun zu diesen gebackenen Avocados, die ich ja gerade erst letzte Woche veröffentlicht habe. Wie ich im Video über-enthusiastisch erwähne, sind diese gebackenen Avocados wirklich unschlagbar. Wenn ihr die auf eurer nächsten Dinnerparty macht, dann seid ihr sicherlich der Held. Mein Freund und ich haben letzte Woche beim Dreh wahrscheinlich viel zu viele von den Avocadohälften gegessen, aber wir können sie immer noch sehen und deswegen gab es die Avocados gleich vorgestern noch einmal. Das tolle an dem Rezept ist übrigens auch, dass die Füllung auch gleichzeitig als Salat gegessen werden kann. So könnt ihr euch viel Zeit und Arbeit sparen, wenn ihr die Avocados für eine Party oder ein gemütliches Abendessen mit Freunden backt. Macht einfach ein bisschen mehr von dem Salat und fertig ist die Vorspeise und ein leckerer Salat. Obwohl die Füllung rein pflanzlich ist, schmeckt sie trotzdem sehr intensiv und man merkt gar nicht, dass sie 100%ig gesund ist. Gebackene Avocados ist meiner Meinung nach der Trend für 2016 und zwar absolut gerechtfertigt.</p>

<li id="instruction-step-1">Den Sesam in einer Pfanne auf mittlerer Hitze rösten, bis er gold-braun ist. Vom Herd nehmen und in einer Schüssel abkühlen lassen. Die anderen Gewürze dazugeben und gut vermengen. Luftdicht verschlossen hält sich Za&#8217;atar viele Monate.</li>

<h4>Für die gebackenen Avocados</h4>
<ol>
<li id="instruction-step-2">Den Reis laut Packungsanleitung kochen.</li>
<li id="instruction-step-3">In der Zwischenzeit die Cherry-Tomaten vierteln und die Petersilie fein hacken. Die Zitrone auspressen. Alle Zutaten außer Avocado in einer Schüssel vermengen.</li>
<li id="instruction-step-4">Den Reis abgießen, kurz abkühlen lassen und zu den anderen Zutaten hinzugeben.</li>
<li id="instruction-step-5">Den Backofen auf 180°C vorheizen.</li>
<li id="instruction-step-6">Nun die Avocados halbieren und ein Teil des Fruchtfleisches entfernen, um Platz für die Füllung zu schaffen. Das Fleisch auf gar keinen Fall wegschmeißen, sondern entweder sofort naschen oder auf Brot genießen.</li>
<li id="instruction-step-7">Die Avocados mit der Za&#8217;atar-Reismischung füllen, in eine Auflaufform geben und ca. 12 Minuten garen.</li>
